Hyde No.5 is a triple distilled, Single grain, Irish whiskey from one single distillery location. Originally distilled in a traditional “Coffey” Copper Column still from pure Corn / maize grain.
Matured for a minimum of 6 years in flame charred, first fill, ex-bourbon casks from Kentucky in the U.S.A. before being ‘finished’ for a further 6 months in vintage BURGUNDY French red wine casks.
These Pinot Noir red wine casks come from the BURGUNDY region of France from the Côte d’Or vineyards near Dijon, France."

Dingle Distillery was founded in 2012 by three friends near the town of Dingle, in County Kerry. The Distillery creates both Single Malt and Single Pot Still Irish Whiskey, as well as vodka and gin.

Producer Tasting Note
Nose: A wonderfully rich aroma, combining notes of rich, sweet fruit with hints of toffee and caramel.
Palate: A comforting mix of warming, malty cereal and smooth creamy vanilla, with fragrant notes of almond and tropical tangerine.
Finish: A lingering finish with hints of dark chocolate, citrus peel and a very light, aromatic smoke.

Shinobu Lightly Peated Pure Malt Whisky

This "lightly peated" Pure Malt (Blended Malt) whisky from Shinobu is made from Peatead single malt sourced from distilleries in the Highlands and Speyside of Scotland. It was blended in Japan and finished in Mizunara casks for 6 months before bottling at 43%.
The fact that this "Japanese whisky" was made from Scottish malt, is not unusual...it falls into a category I call "Japaneseish"... and event the big guys have done it. It was well received at the Calgary Whisky Festival, so we figured we'd better give it a go!
