"Cincoro Reposado gains its remarkable aromas and taste from a very unique aging regimen. Our barrels are imported from Kentucky, and were first used to age Bourbon. By aging Cincoro Blanco in these barrels, we highlight the smoothness of our Blanco, complimented by wood notes from aging 8-10 months in an underground cellar, considerably longer than the minimum 2 months required for Reposado. On the nose Cincoro Reposado has amazing notes of vanilla, baking spices, and toasted oak. On the palate, sweet cooked agave, caramel, white chocolate."

The Sierrudo apparently takes more than a dozen years to reach maturity and grows to an exceptionally large size. Bonete Raicilla Costa is made from two Agave strains: maguey Chico Aguillar, and maguey Amarillo. The harvested agave is cooked in an underground oven, it is then fermented in open-air tanks allowing wild yeast to take hold. After this, it is double distilled in wooden stills made from the Oyamel tree and the trunk of the Bonete tree, which is native to the Jalisco Coast by master distiller Joaquin Solis.

The Mezcalero behind this expression is "Eleuterio “TÍO Tello” Perez Ramos, "a second-generation mezcal producer on his father’s side and at least a fourth-generation producer on his mother’s side, which is believed to have been distilling mezcal in El Nanche, Oaxaca, since at least the mid-1850s. Tio Tello’s mezcales demonstrate his demanding standards for the use of ripe “quiotudo” agave, and he employs unique distillation cuts that expertly balance the acidity of “xixe” (tails) with bold roasted agave of the hearts."
