The Javallier story started in Meursault, after the war in 1945 when Raymond Javillier decided to cultivate 2 ha. of plots which had always belonged to the family. The turning point for the estate was in 1974: Patrick received his diploma in wine studies (Diplôme National d’Oenologie) and his father handed over the estate with full responsibility for the harvest and wine-making process. Throughout the 1980s and early 1990s, the estate acquired new plots and the addition of land which belonged to the family of his wife, Catherine. In 2005, Marion, the elder daughter of Patrick, joined the domain after studies in management and winegrowing with the responsibility for sales and the winemaking process of the red wines. In 2011, Pierre-Emmanuel Lamy, the husband of Laurène (Marion’s sister) also joined the domain, in charge of the fieldwork and winemaking process of the white wines. Today, Marion and Pierre-Emmanuel are the third generation to benefit from and develop the family tradition. Javallier makes some of the finest white wines in Burgundy.

Winemakers notes: Crafting a pinpoint precise, squeaky clean wine is one of the most boring things we could think of. We prefer embracing your inner creative and searching for more radical experiences. This has become one of our most cult-followed wines since we began. It's not exactly white wine, nor red - many call it Amber wine...but we just call it Esoterico. We make no additions of any kind - save for sulphur when we bottle the wine. There is no fining or filtration involved, with the wine allowed to clarify by gravity alone - resulting in a slight haze and sediment. This is one of the most enjoyable wines to craft, as there was no preconceived idea of what it must taste like - the chief driver is pure drinkability - a 'scrumptious' quality - mouthwatering acidity and 'say hello!' tannins. It's a Bohemian at heart.

The Rottensteiner family is one of the oldest wine-growing families in South Tyrol/Alto Adige region. Their winemaking history began many generations ago, here where the vines grow on the red rock, the porphyry, typical of this region.
