The Val d’Orcia, a UNESCO World Heritage Site since 2004, encircles the Podere Forte. The estate was founded in 1997 by Pasquale Forte, a visionary entrepreneur who has created a balanced system where every element complements the others, following the principles of organic and biodynamic agriculture. The old concept of the corte romana has been recreated on the 500-ha estate: a place where people, plants and animals coexist in harmony and sustainable self-sufficiency. Wine is the main focus, but Podere Forte is also synonymous with the breeding of Cinta Senese pigs, Chianina cattle and Suffolk sheep, as well as various other farm animals, all living on biodynamic feed. Podere Forte produces its own fertilizers and compost using vine prunings and fallen timber from the woods. The pigs eat acorns and chestnuts in the woods where they roam freely, the bees pollinate the flowers and aromatic herbs in the botanic garden where the hives are. The olive groves cover around 26 hectares and in 2020 production of the first varietal oil, from the Frantoio variety, started.

The vines face south-east to south-west and are between 320 and 480 metres above sea level. Yields are kept low to improve quality, and the vineyards are certified organic.

Gruner Veltliner, Austria's darling white grape varietal, is making Burgundian Chardonnays look positively bland and has wowed wine critics internationally for it's great food-matching credentials. Full of the flavours of green apple and citrus, with a white pepper finish, it offers a wonderful hit of mineral freshness. This wine is made entirely from Grüner Veltliner grown on sandy loam. The grapes are gently pressed into stainless steel where they ferment and age on lees for a short period of time. In perhaps the most significant change of ownership in Vouvray since the Hwang family took possession of Domaine Huet (a legendary Vouvray producer), Bernard Fouquet has handed over the running of his domaine to his young associate, Charles Lesaffre. The handover of responsibility was a little more rushed than originally planned; the gradual transition suddenly accelerated during the Covid-19 pandemic, with Charles essentially taking over at the time of the 2020 harvest, with a formal handover coming in 2021, followed by the name change to Aubuisieres.
A fantastic moelleux (the term for sweet chenin blanc from the Loire Valley), this dessert wine is vibrant, with notes of baked apple, honey and a touch of almond. Perfect to pair with pate, foie gras, cheese or fruit pies. It's sweet but far from cloying, and organic.
Bulliat Morgon

Noël Bulliat and his son Loïc run this family estate that covers 27 ha in 8 different crus in the heart of the Beaujolais region. It began in 1978 when Noël bought 4 ha of Beaujolais Villages straight after graduating from viticultural school. The grapes are hand-picked and fermented with the whole clusters intact. Morgon is arguably the most important of the Beaujolais crus (there are 10 in total) and - along with Moulin-A-Vent- the most powerful in terms of concentration of fruit. The grapes undergo a cold maceration to preserve aromatic profile before being moved to cement tanks for semi-carbonic maceration, lasting 10 to 12 days using indigenous yeasts. They are certified organic and offer bright, expressive notes of red berries, minerality, subtle spice and lively acidity to tie it all together. Try it with duck or roast chicken.
