The assemblage majors on bitter-sweet apples with just a hint of sweet varieties, such as Carting, Sweet Moen and Belle Fille de la Manche, all native to the centuries-old orchards of Normandy. Light fermentation preserves the natural floral aromas and yields a lower alcohol level. Sweeter on the nose and true to the Normandy style of cider, enjoy this refreshing feel-good fizz on a sunny summer’s day, or explore its intriguing sweet-savoury nature with a fresh goat’s cheese."

Acidity and sweetness
This sake invites you to focus on the balance of acids and residual sugars. One notch less polished, rice so much to express itself more in a suavity specific to Yamada.
It will nevertheless be necessary to wait a minimum of a year for the sugars to concentrate and release the potential of this sake.
From then on and for at least five years at each tasting, the mouth will evolve, sometimes declining on pear and melon from the Andes, more and more ripe.
With white fish or crab meat, the fusion is complete.

Johanna Cecillon works with her partner Louis at this small domain, maintaining the orchards, manually harvesting apples and producing cider. The orchards were certified organic 10 years ago by Ecocert and they converted to biodynamic farming 4 years ago, as a gesture of support for the life of the land. The cider is bottled in late April, with natural bubble formation and no added sulphur, as well as being non-carbonated and non-pasteurized. A second fermentation occurs in the bottle. Wild yeasts are necessary to make the natural bubbles, It displays a fruity nose, fine bubbles, light golden colour, slightly dry with caramel and vanilla flavours.
