These prestigious experiences deeply informed his winemaking approach, balancing tradition with contemporary techniques. Rockford Wines feature high-quality traditional wines made from some of the best old Barossa vineyards. The winery and cellar door sales are part of a paved courtyard surrounded by stone buildings dating back to the early settlement of Krondorf. Founder and winemaker Robert O'Callaghan is a legend among Aussie winemakers and his wines have had a profound influence on winemaking philosophy and wine style in the Barossa. In addition to the small home vineyard, Rockford works in partnership with several independent wine growers around the Barossa, with vineyards in Kalimna, Ebenezer, Moppa Springs, the Eden Valley and central Barossa. This gives Rockford a wide variety of soil types, mesoclimates and altitudes for its grapes. Many of the vines are planted on their own rootstocks and range between 60–100 years old, giving intense, concentrated grapes that translate into the wines. Winemaking is largely done using traditional methods such as basket presses, open-topped concrete fermenters and a 1880s Bagshaw (grape) crusher that was found on site when O'Callaghan purchased the property in the 1970s. This Shiraz is built for the long haul, give it a good decant if you want to drink it now.

Bulliat Morgon

Noël Bulliat and his son Loïc run this family estate that covers 27 ha in 8 different crus in the heart of the Beaujolais region. It began in 1978 when Noël bought 4 ha of Beaujolais Villages straight after graduating from viticultural school. The grapes are hand-picked and fermented with the whole clusters intact. Morgon is arguably the most important of the Beaujolais crus (there are 10 in total) and - along with Moulin-A-Vent- the most powerful in terms of concentration of fruit. The grapes undergo a cold maceration to preserve aromatic profile before being moved to cement tanks for semi-carbonic maceration, lasting 10 to 12 days using indigenous yeasts. They are certified organic and offer bright, expressive notes of red berries, minerality, subtle spice and lively acidity to tie it all together. Try it with duck or roast chicken.

This esteemed wine estate in Ayl has among the best steep slopes on the Saar. In addition to the famous Ayler Kupp, they cultivate two other important vineyards in the Mosel region: the Saar Feilser directly above the river and the steeply sloping vineyard Schonfels, a little farther upstream. They recently replanted and recultivated the now forgotten Lambertskirch, just a stone’s throw from Schonfels.
Their white wines have been among the best in the Saar for many years. Since 2013,they have been a member of the VDP (Association of German Prädikat Wine Estates). Their wines from VDP.GROSSEN LAGEN® in the dry and off-dry styles are particularly special. This is a pure, bone-dry Sekt that expresses the transparency of Riesling in these cool, southerly vineyards of the Mosel valley. Although this is bottle fermented like Champagne, it is a world away from the toasty richness of that wine. Instead it's properly dry, chalky and bracing, the ultimate appetite-whetter.

With vineyards based in Montagne de Reims, they specialize in Chardonnay (90%) although they also have a small plot of Pinot Noir. This small estate (7 hectares) was started by Arnaud's father (Bernard) in the 1950s and is organically farmed. The vines average 35 years of age and the Chardonnay is produced from a clone unique to the area.
