Nathan Kaiser chose to work with grain in a slightly different manner than the rest of his family when he opened the 2Bar Spirits Distillery in Seattle, Washington in 2012. 2Bar created the first entirely locally-made Bourbon in the city and to this day the distillery focuses on using Washington grain and doing everything in-house - from milling and mashing to distilling, ageing and bottling. The 2Bar name is more than just spirits and whiskey - The 2Bar ranch was founded over a century back in Texas. The name has been in the hands of the Kaiser family of ranchers for five generations now.

Wheat is a less common grain to see take centre stage in American Whiskies, though it happily plays an amazing second fiddle in Bourbon such as Maker's Mark, William Larue Weller, Pappy Van Winkle, and more. There are some solid Wheat Whiskeys out there if you look though, such as Bernheim from Heaven Hill and Dry Fly out of Washington State. Joining that duo is this Wheat Whiskey from Woodford Reserve and parent company Brown-Forman.

Made from a Mashbill of 51% Rye, 35% Corn and 14% Malted Barley at Heaven HIll's Bernheim Distillery. The mash bill differs slightly from the excellent Rittenhouse Bonded Rye which is made at the same distillery and also owned by Heaven Hill. Like the Elijah Craig Bourbon, this Rye is bottled at 47% ABV.

What's this? A Tennessee Whiskey that isn't Jack Daniel's, George Dickel, or Uncle Nearest?!?
Leiper's Fork Distillery opened mid-way through 2016 in Williamson County, Tennessee which is about a 40-minute to the drive south and west of Nashville. The distillery produces a few different whiskies including a Straight Rye, A Bourbon, and this Tennessee Whiskey. The Tennesse Whiskey uses the same mash bill as their Bourbon which is 70% Corn, 15% Rye and 15% Malted Barley but goes through the Lincoln County process which means the spirit is filtered through sugar maple charcoal before being filled into charred virgin oak for maturation.
As this Tennessee Whiskey is bonded, it has to follow the following guidelines as set by the 1897 Bottled In Bond Act:
- All whiskey in the bottle must be produced by one distillery and by one distiller over the course of one distillation season.
- The whiskey must be at least four years old.
- It must be bottled at least 100 proof / 50% ABV
- The whiskey must be aged in bonded warehouses under United States federal supervision.
- The label on the bottle has to state which distillery it comes from and also where it was bottled.

This intriguing bottle from Jack Daniel's is not a just Tennesse Whiskey - instead the label states it is a Blended Straight Whiskey. It is created using three different bonded whiskies made and matured at Jack Daniel's Distillery: Malt Whiskey, Rye Whiskey, and Tennessee Whiskey all married together and bottled at 50% ABV.

Kentucky Owl Wiseman Bourbon

Though there are plans to build a proper Kentucky Owl Distillery, but construction is not likely to begin until at least 2024. Kentucky Owl Wiseman is currently contract distilled at Bardstown Bourbon Company. The Wiseman is a blend of the distillery's Rye and Wheat Bourbon mash bills that are at least four years of age. These two Bourbons are then further blended with 5.5 Year Old and 8.5 Year Old Bourbon sourced from undisclosed Kentucky distilleries. The resulting whisky is bottled at 45.4%.
