Producer Tasting Note
Nose: Delicate notes of juniper berries, lemon and hyssop.
Palate: Delicate botanical tastes, with juniper and lemon being the dominant notes.
Finish: Medium-bodied, a little oily. Long, lemony finish.
Producer Description:
"Our gin starts the same as our single malt series – 100% pure malted barley that’s mashed in-house and distilled in our pot still. Then we add a heap of Juniper and botanicals, hand-sourced from Tel Aviv's Levinsky market: hyssop, lemon peel, orange, chamomile, verbena, cinnamon, and black pepper. We then let the botanicals rest in the still for 48 hours and then distill for the third time in our 250L pot still, for extra smoothness. 46% abv./92 proof."
Gin Mare
$53.99
A Mediterranean gin produced in an old chapel in Vilanova, just outside Barcelona in Catalonia. 94pts Beverage Tasting Institute.
From the Producer: "Gin Mare has long been the reference point for a gin that’s pushed the boundary of what a gin could taste like, with rosemary, thyme, olive, and basil included in the botanical line up – it’s savoury and unusual, but balanced. It’s a Spanish Gin made in Spain – something that in due time will help them establish themselves in one of the world’s biggest gin markets.
"Made in the small Spanish fishing town of Vilanova, just outside the city of Barcelona, Gin Mare epitomises the Mediterranean spirit.
"The pot still used to create Gin Mare is housed in a chapel in a property that was once a monk’s retreat. Cue Holy “Spirit” puns… Purchased in the 1950’s by the Giro Ribot family to house it’s growing business, they managed to combine utility with a characterful location; space to distil but adorned with a fresco. Who said anything about compromising?"
Jura Seven Wood
$121.99
Not content with double wood or triple wood, Jura has gone right to SEVEN WOOD with this bottling. Not just a made up golf club, the Jura Seven Wood Single Malt Scotch comes from the Jura distillery on - get this - the Isle of Jura. The Jura Seven Wood is composed mostly of unpeated Jura Single Malt plus a small portion of peated Jura as well. It is aged in a combination of American Oak ex-Bourbon barrels and SIX different French Oak Barrels. Bottled at 42% ABV
Producer Description
"The ability of Jura’s tiny island community to reimagine and reinvent has allowed our distillery to thrive. Such vision has brought to life this complex single malt - a fitting tribute to our Master Blender’s skill. Thanks to the forestry commission, sawmill and cooperage in France, we use the finest virgin French oak casks to enhance our whisky. Layers of complexity and flavour emerge from a maturation journey that begins in American White Oak ex bourbon casks before a portion of the whisky is split between six different virgin oak casks sourced from across various regions of France. The result is a fruity and spicy whisky with flavours of crème caramel, baked peach and sweet liquorice."

From The Producer
"Juniper, seaweed (we use dulse, from the Grand Banks) and a touch of savoury make a pure Newfoundland gin that has a hint of the ocean in it. This is refreshing, like being enveloped in an ocean mist surrounded by a host of pure local botanicals. We've kept it very simple and very pure and we think this is a fine twist on the way gin should be!"

Dormilona Orenji
$38.99
This is the perfect 'training-wheels' wine if you're just getting into skin-contact white wines.
Orenji is a cheeky little number. A blend of Semillon and Sauvignon Blanc, hand-harvested from an organic vineyard in Margaret River. Jo let the fruit hang out on skins for six weeks before pressing it and putting it to bed in barrel.
She wants this to be a friendly style of orange wine, not a big, scary, chewy number.
It's something you can knock back without thinking too much about. And if you're keen to get your head around skinsy whites, it's a terrific place to start.
Josephine Perry is one of the most exciting emerging producers in Margaret River. Her Dormilona label is setting a new tone for the region.
A self-confessed 'lazy-bones' winemaker, Jo is low-intervention in the winery, instead focusing her energies on the quality of fruit that she brings in the winery.
She uses only organically and biodynamically farmed fruit from high-quality vineyards across Margaret River, and is bringing an alt-styling to the way she produces the hero varieties of this famous region.
These are Margaret River wines with flair and originality. From vineyard to glass, Jo handcrafts each wine with love and tender hands. An authentic producer who's rightfully gaining plenty of attention.
