Dating back to the 1650s, the Dumangins have always worked with the vines of Champagne, but it wasn't until 1890 when Hippolyte Dumangin created Champagne Dumangin in the 1er Cru vineyards of Chigny-les-Roses. Five generations later, Champagne Dumangin is producing an array of wines, from their classic, feminine style to their newer, high-end cuvees. This non-vintage blend is made up of 47% Chardonnay, 37% Pinot Noir and 16% Pinot Meunier, and it accounts for almost 50% of their production. It is a truly delicious wine, pale salmon in colour with an enticing scent of strawberry. On the palate, it offers subtle notes of raspberry and citrus with some toasty brioche notes on the finish.

"This Prosecco Rosé Millesimato is obtained from a carefully managed winemaking process, which involves the soft pressing of the Glera and Pinot Noir grapes , followed by static decantation and fermentation at 18°C with selected yeasts for the Glera. The Pinot Noir undergoes red maceration to enrich the wine's profile. The final blend is created before the second fermentation in an autoclave, using the Charmat method, for a period of 60 days."
Val d’Oca is one of the oldest, leading producers of Prosecco. Their sparkling wines are made with the Glera grape which is cultivated (by hand) and vinified in the hills of Valdobbiadene. The famous Valdobbiadene Prosecco Superiore DOCG was born here, and it is now considered the benchmark for quality in the region. Davide Carlone is a small but important winegrower in Piedmont. Based in Boca, a small appellation in Alto Piemonte, at the foothills of the Italian Alps, Davide’s focus is on Nebbiolo and the local supporting cast, Croatina (for which he may be the strongest advocate), and Vespolina. Boca sits on the east side (left bank) of the Sesia River and is shared between the communes Grignasco, Boca, and Prato Sesia. Most of the vineyards are tucked further back into the mountains away from the Sesia and experience a slightly cooler influence from the Alps. While many of the important local appellations mostly sit between 250-350 meters of altitude, with some up to 400, most of Carlone’s vineyards face south and range between 380-450 meters. Like many vineyards in the area, outside of important appellations like Gattinara and Ghemme, his vineyards are largely surrounded by forest and in constant contact with fresh alpine winds, making for wines with great tension and strong array of more savoury characteristics rather than punchy fruit.

An avid practitioner of viticulture and oenology, Charles joined Bernard as an associate in 2019. Two years into his tenure, Charles has emphasized organic and biodynamic practices. Charles has continued, as Bernard before him, to capture the unique Vouvray mineral tones, along with the wonderfully balanced expression of fruit of the Chenin Blanc grape, in his wines.
The grapes come from a tiny parcel in the Loire Valley called Petit Clos, which boasts four-decade-old (and more) vines of Chenin Blanc. The clay-limestone soils help produce a dry, rich and powerful white. Best served with goat cheese, chicken salad or rich fish like salmon or sea bream.
