GASTRONOMIC FUSION
Sometimes you don’t see things coming and they hit you square in the tasting glass in the most surprising way. And whatever you’re expecting, it’s safe to say that this isn’t it! THIS, is a peated single grain whisky... Made from an 8 year old Highland malt from a combination of 1st fill ex-bourbon barrels and 2nd fill ex-bourbon hogsheads, and bottled at 50%.

Dumangin Whisky Bushmills 2014
$101.24
This one says its first maturation was for 6 years in (probably in ex-Bourbon) before a 12-month finish in a Ratafia Champenois Barrel. So...a seven-year-old then, rather than 6? Who knows? Maybe they were short a day or two somewhere in there. Either way, we love Bushmills. Especially when it comes from the indie bottlers.
282 bottles. Natural colour and non-chill filtered. 47.3%
