The Mash Bill for The Mattie Gladden Bottled in Bond Bourbon is low corn and high rye: 55% Corn, 35% Rye, and 10% Victory Malt. The mash is fermented with two yeast strains and the focus is on putting the grain notes first and letting the fruit notes come along for the ride. After distillation, the resulting spirit is aged for at least four years before being bottled at 100 proof, or 50% ABV, as the Bottled in Bond act of 1897 states it must be.
Basil Hayden Red Wine Cask

This curious release comes from Wolf Spirit of Eugene, Oregon. The Bourbon was sourced from Kentucky, according to the producer's website, but that might be an error. The mash bill is listed on Wolf Spirits's website as 84% Corn, 8% Malt, and 8% Rye, which lines up with the mash bill for George Dickel/Cascade Hollow Distillery - but that is in Tennessee... What is known is that the 14 Year Old Bourbon was finished for up to six months in casks that previously held 12-year-old Jamaican Rum. The result was then bottled at 48% ABV.

Jack Daniel`s Single Barrel 62.5%

Prepare yourself, for this is no shrinking violet. Jack Daniels Single Barrel at Barrel Proof weighs in at 129 proof. Made from Jack Daniel’s typical mash bill of 80% Corn, 12% Rye, and 8% Malted Barley. The mash was distilled and then put through the Lincoln County Process before being put into heavily charred virgin oak barrels made at the distillery’s own cooperage. Single barrel releases from Jack Daniel’s are typically 4 to 7 years old. 62.5% ABV
At its base level, the Lincoln County Process used to make Tennessee Whiskey means that the new make spirit or white dog/white lightning is filtered through sugar maple charcoal before being put into barrels to age. Jack Daniel’s has its own version of this, wherein the distillery burns sugar maple boards/ricks to a heavy char and then sprays them down with water to prevent complete combustion. After burning the new charcoal is ground into pellets and packed into vats through which the 70% ABV new make spirit filters through. The filtered spirit is cut to 62.5% ABV and put into heavily charred virgin oak barrels to age away.
