Collaboration is about trading tricks and pushing boundaries, and for this one, we teamed up with Brasserie du-Bas Canada, to go all in using their preferred Weyermann malt while adopting their dry-hop schedule and rates. Redefining the limits of hop impact, central to our shared vision was @ freestylehops Nelson Sauvin, Rakau, Citra and Citra Cryo. Together they bend light into a silky smooth coup with notes of kiwi, strawberry, mixed berries, and a hint of diesel, all resting on a swirl of peach soft serve. "Our brewer Joerg grew up in Brazil and decided our collective palates needed to meet his take on the Catharina Sour—pride of his home country and unofficial beer of “mais um, por favor.”
This isn’t an acid-bomb punch in the teeth. It’s a highly drinkable fruited sour: bright tangerine tang up front, with a deeper, lush papaya underneath. The team opted for a sweet base beer with a lower carbonation keeps it smooth and creamy. The whole thing lands soft, round, and a little luxurious. It’s Brazilian beach culture by way of Calgary brewhouse: easygoing, colourful, and surprisingly cultured."
