The barrel-aged Chimay Bleue of May 2023 stands out from classic Chimay Bleue thanks to the many nuances provided by the additional fermentation in wooden barrels. On the eye, the beer boasts a deep brown robe with a bright glint. Its extremely fine and smooth foam also possesses a slight shade of cream.

This edition is particularly fruity on the nose. Pleasant aromas of dried apricot, sweet apple and ripe pear, characteristic of Calvados, complement each other perfectly.
Delicious impressions of chocolate and soft mocha blend into a perfectly balanced palate of toasted hazelnut and spicy cookie. All this is topped with hints of vanilla and a slight floral touch. The bitterness is present just enough to contrast nicely with the dark candy and the whole flows into a delightfully lingering and warming taste.
This 2023 edition of barrel-aged Chimay Bleue boasts an excellent blend of the characters of Chimay Bleue and Calvados. This balance between roundness and powerfulness is best appreciated between 6 months and 1 year after it is bottled.

3 Fonteinen Schaarbeekse Kriek is the result of macerating local hand-picked Schaarbeekse cherries on traditional lambik. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.
For this Schaarbeekse Kriek, we macerated freshly picked local Schaarbeekse sour cherries for a tad less than twelve months onto two-year old lambik. The maceration happened on a small foeder. Some more jonge lambik was used to blend this fine fruit lambik. The weighted average age of this Schaarbeekse upon bottling is more than twenty months. The final fruit proportion is 372 grams of Schaarbeekse sour cherries per litre of finished Schaarbeekse Kriek, More than 80% of the grains used while brewing, were sourced in our own Cereal Collective.
