Nose: rich, Jamaican ginger cake, sherry, delicious spices and fruit.
Palate: big sherry notes, dates, all spice, ginger and raisins with dark chocolate.
Finish: more sweetness and spices. Softest trace of wood smoke on the tail.

Flavour profile: Spicy & sweet.

Panel's tasting note: "Freshly baked apple pie arrived with a heavy dusting of cinnamon and nutmeg, while the dark intentions of demerara-coated walnuts and macadamias bathed in a spicy fruitcake mix. Then a burst of oils from singed orange skin introduced marmalade and black cherries as we ventured into a palate of rich spice. Marzipan and almonds now merged with dark chocolate as raisins and liquorice complemented hazelnut liqueur in hot cocoa.
A dash of water opened a big butt of sherry infused fruit that combined oxidized apples and pears with rhubarb crumble and sultanas. Chocolate truffles and praline gathered around ginger bread on the finish before leaving us with pink grapefruit and cloves."

For this latest Islay blended malt expression we wanted to introduce some sherry matured whiskies into our recipe to bring some weight and complement the huge smoky elements of the spirit. We opted for the dark and syrupy delights of Pedro Ximenez sherry butts, along with some refill bourbon hogsheads to temper and balance the dark sweetness, and bottled it with an age statement of 9 years and at 50%.

What we do know is that it was distilled in 1999, filled into a Hogshead Cask (Berry's No.2) and bottled at 53.6% after 21 years exclusively for KWM.
