The goal was clear in my mind: a Grappa to encase the aromas of Tradition, but without the typical flaws of old fashion Grappas, often stingy, aggressive and oily.
It had to be an authentic Grappa, sincere and genuine, what I would now call a classic Grappa.
Moreover, it was meant to be a bridge between the Grappa of the past and the Grappa of the future, representing the present of Grappa with its best typical features."

Grappa is produced from the skin of pressed grapes, in this case, Prosecco, the same grape that produces the wonderful bubbly from Italy. This is excellent , not the rust remover spirit most of us are familiar with, its shows a wonderful floral character, a bracing spirity structure with a just a note sweetness on the finish. Rinse a just finished espresso cup with this grappa and savour.

Grappa is the Italian style of marc, which is a spirit distilled from the pomace of grapes. This grappa is produced by Distillerie Bonollo Umberto Spa using the pomace from grapes pressed to make Prosecco. 40% ABV.

"Giusti Wine produces an outstanding collection of wines. The splendid estate is located in the Montello hills, Asolo, 45 minutes from Venice. Giusti Wine is owned by Ermenegildo (Joe) Giusti who immigrated to Canadian late 1970s. Mr. Giusti found success in the construction industry in Canada and in 2002, Mr. Giusti went back to the Montello Hills and decided to revive his family’s vineyards. The winery has grown to over 75 hectares and is the largest landholder in Veneto. Currently, Mr. Giusti splits his time between Calgary, AB & and the winery in Veneto, Italy. Giusti wine prides itself on producing estate grown award winning proseccos & still wines."
