The popular Dassai “50” was replaced by Dassai “45” in 2019 by polishing the rice a bit more. And even though it is the most affordable of their lineup, it belongs to the highest premium sake category with no brewer's alcohol added.

The "45" in its name refers to the rice polishing ratio, which means that the rice used in making this sake has been polished down to 45% of its original size. Love its harmony between sweetness, acidity, and umami, which makes it enjoyable on its own or as a complement to various dishes.

Raifuku Aiyama crafts this sake with a balanced combination of mellowness and sharpness. It has a delicate, elegant scent reminiscent of pears, and a gentle finish on the palate, Its bright aromas of pineapple, passionfruit and yogurt lead to a high-impact palate with a subtle lemon finish. It's brewed by the small Raifuku Sake Brewery in Chikusei City, Ibaraki and is made with 40% polished Aiyama rice.

Produced by Yamanashi Meijō Brewery. The brewery was founed in 1750 and resides in Hokuto City, Yamanashi Prefecture. This Sparkling Sake is called Yama no Kasumi, and it was first produced in 2015. The sake undergoes a secondary fermentation in the bottle, which results in the sake becoming sparkling in style.
