The fruit was harvested at night to retain freshness. Initial skin contact was followed by 7 days of cool fermentation with our Rhône isolate yeast and hand-plunging three times daily. Maturation then occurred in 75% new oak hogsheads for approximately 14 months. This bold Cabernet is perfect to pair with richer food; Think pot roast, meat pie, sausages and meatloaf.
Cosimo Taurino Salice Salentino Riserva

A blend of Negroamaro (80%) and Malvasia Nera, picked from vines 15 to 20 years old. The wine spends between four and six months maturing in French oak prior to bottling. Close to ten years on since the grapes were picked, the wine is currently showing wonderful lavender, cherry and raspberry notes along with integrated acidity and minerality. Getting a decade-old wine that drinks this well at this price is impressive and as such it remains one of the great bargains in Italy's vast wine realm. It would pair nicely with lasagna or roast chicken.

Cantina Cosimo Taurino was founded in 1970 by the legendary Apulian producer, Cosimo Taurino. He was a pioneer of Negroamaro, and of the Apulian wine industry, changing its reputation of the 'not so great southern region that only produces bulk grapes for the north' to a region known for its high-quality red and rosé wines. This is a beautiful Mencía that comes from 70 to 90-year-old vines from the villages of Cacabelos, Vilafranca del Bierzo and Toral de los Vados, all in the Bierrzo region of Spain. The wine is fermented using ambient yeast fermentation then left to age for nine months in French and American oak barrels. It's then aged another 6 months in barrel before it is finally released. Mencia is grape that was overlooked outside of Spain but it's gaining a loyal following for its calling card of flowery aromas complimented by flavours that include strawberry, raspberry, black licorice, pomegranate and cherry. It can produce light, almost Pinot Noir of Gamay-like wines but this one is considerably more substantial, ideal with grilled meats.

Located in the eastern part of the Baetic mountain range, 80 km from the Mediterranean Sea and at an altitude of 600 m above sea level, Jumilla has a continental Mediterranean climate with a semi-arid nature. It is also a dry region located on a mineral and calcareous soil structure mixed with rich clay soils. This one is made entirely from Monastrell (a.k.a. Mourvedre) and is aged in steel tanks without any oak influence. The result is a wine with great purity and freshness, offering up notes of black plums, spice, and a subtle balsamic note.

Things start to get serious in this range. It's produced from south facing vineyards in the Burgos Province from 50-year-old vines and aged in French and American barrels for 18 months. It spends two years in bottle prior to release. There's some grip to this wine along with dark red fruits, spice and minerality, and ideal companion to roasted meats and game. Decanting is recommended.

"The Bindi Dixon Pinot Noir is based upon declassified grapes from the Original Vineyard planted in 1988 and grapes from the new Block K, planted in 2001. The ideal of this wine is to produce a delicious, perfumed, spicy harmonious, textured wine that is not as intense, complex nor ageworthy as our individual vineyard wines. Even when the outstanding Block K vines are older we will continue to declassify sections or barrels from each vineyard and produce this wine.
The wine is fermented the same way as our other Pinot Noirs in that it is ostensibly 100% de-stemmed and gently worked in small open vats. The wine spends 11 months in French barrels, of which about 10-15% is new.
Production varies from 500-700 dozen per vintage.
