Fine quality Aszú berries with good flavour, balance and perfect botrytis were macerated in fermenting must for two days. After pressing and finishing fermentation, the wines were filled into 300 and 500-litre Hungarian oak casks in our extensive, deep, underground cellars to mature for over two years. The final blends were carefully crafted in the spring of 2020.

Along the steep, narrow valley that traces the northern Rhône, the appellations of Côte-Rôtie, Condrieu and Saint-Joseph take their place among the great wines of France, and Domaine Faury is one of the region’s most artisanal producers. When Philippe Faury took over the domaine in 1979, the family was selling wine, peaches and cherries, and the bulk of their clientele was local. Over the years, Philippe expanded their holdings to over eleven hectares. The Saint-Jospeph sees 35 to 70% of whole clusters macerate in open concrete vats for 3 weeks. Gravity barreling occurs in large containers (foudres and demi-muids) for an aging period of 15 to 18 months. The wine is vinified with natural yeast and carried out by gravity, without fining or filtration.

Elvire, married to Léon Féraud was a winegrower and mother of four children. Paul, the youngest, worked the family vineyard since he was 14 years old. In 1964 he decided to produce his own wine and marketed 2,000 bottles a year. Laurence, the daughter of Paul & Odette returned to settle in Châteauneuf du Pape in 1987, having completed her wine studies and wine and spirits business school. She proposed to her parents to create an independent family estate of 5ha and registered the name Pegau. Fast forward to this century where Domaine du Pegau is regarded as one of the top producers of Chateauneuf and one of the top producers on the planet.
