Felton Road is located in Bannockburn, in the heart of Central Otago. Vines were first planted on the estate in 1992, and they released their first vintage in 1997. Winemaker Blair Walter has been with Felton since the 1997 vintage, crafting wines using minimal intervention, wild yeasts, no fining or filtration, allowing the unique character of the terroir to express it's personality. Their wines have gained worldwide recognition as some of the most highly regarded bottles from New Zealand’s South Island. They farm biodynamically and are fully certified by Demeter.

Why It’s Better
Most chocolate bitters hide behind vanilla and sugar. I lead with raw, bittersweet cacao nibs, extracting the pure, nutty essence of chocolate without the sweetness. It adds a "velvety" texture and a dry, sophisticated finish. This isn't a cheap product to produce - I use over 30lbs of cacao nibs in a 100L batch.

An infusion of wild thyme (thymus capitatus), bergamot and Italian helichrysum. Combined and mixed only afterwards, at the first sip they reveal the immediate pungent taste of thyme, then rounded off in the mouth by the hints of chocolate and vanilla of helichrysum and the spicy ones of bergamot. Finally, notes of hay, wood and cut grass that linger minutes after the first sip and that bring to mind all the smells of the Sicilian countryside.
