Protos has the distinction of producing wines in the Ribera de Duero region since 1927, making them the first producer to sell their wines commercially. They authorized the use of their Ribera del Duero brand for the region, and in doing so created what has become one of the most famous names in Spanish viticulture. They built their new state-of-the-art facility in 2008, and the structure has won awards for its design. The fruit for this wine is sourced from two of their oldest vineyards, Burgos and Valladolid, both averaging 35 years of age. It spends 12 months in French and American barrels and shows subtle notes of vanilla, char, and spice, all wrapped in a core of red fruits. The tannins are soft and well-integrated, a nice choice for charcuterie or roast chicken.

Charles is the grandson of Gérald Bruley des Varannes, the man from whom Bernard's father André acquired his first vineyards, thereby bringing the story of the Domaine full circle. An avid practitioner of viticulture and oenology, Charles joined Bernard as an associate in 2019. Two years into his tenure, Charles has emphasized organic and biodynamic practices. "El Jolgorio translates to “the revelry”. Jolgorios are small festivals that occur in remote, mountain villages throughout Oaxaca, Mexico. They celebrate births, deaths, weddings and Saint’s days. For centuries, the lifeblood of these celebrations has been traditional mezcal. In 2010, the Cortés family began building a collective of top mezcal distillers from around Oaxaca. As of 2019, El Jolgorio represents sixteen different families, working in ten different regions of Oaxaca, Mexico, each with its own special story. Every bottle is hand-marked with the specific details of each batch, to truly connect the drinker with the family behind the expression.
In 2017, the team behind the brand realized that certain varieties of agave would be extremely limited and they would only be able to make them available once per year (if at all). They began packaging these rare editions in black bottles to set them apart from the other releases.
The artwork on the first 8 releases was created by Alejandro Peña (Espadin, Pechuga, Tobala, Cuixe, Madrecuixe, Tepeztate, Barril and Mexicano). One of the many newer distilleries on the Irish Whiskey scene is the Shed Distillery, which was founded in 2014. The Drumshanbo Single Pot Still Irish Whiskey is triple distilled with a grain combination of malted barley and Irish Barra Oats. The resulting spirit is aged in a combination of ex-Bourbon and ex-Oloroso casks.
What is Single Pot Still Irish Whiskey you ask? It is whiskey made using a combination of malted and unmalted barley. Why do this, you ask? Why, to dodge taxes, of course! The Malt Tax came into being in Ireland for a short time starting in 1785, enforced by the (insert expletive said in your best Irish accent here) English. The Irish, being Irish, decided that they didn't need to use malted barley for the entirety of the mash used to distill whiskey and started adding portions of unmalted barley. Necessity being the mother of invention, this eventually became a legitimate style of whiskey-making that is now not just celebrated but codified into law in Ireland with the Single Pot Still Irish Whiskey classification.
