Hyde No.5 is a triple distilled, Single grain, Irish whiskey from one single distillery location. Originally distilled in a traditional “Coffey” Copper Column still from pure Corn / maize grain.

Matured for a minimum of 6 years in flame charred, first fill, ex-bourbon casks from Kentucky in the U.S.A. before being ‘finished’ for a further 6 months in vintage BURGUNDY French red wine casks.

These Pinot Noir red wine casks come from the BURGUNDY region of France from the Côte d’Or vineyards near Dijon, France."

The Annapolis Valley is a long, relatively narrow valley located on the western edge of Nova Scotia, situated between two parallel mountain ranges, along the shores of the Bay of Fundy. Close proximity to the Bay of Fundy and the world’s highest tides creates an incredibly unique growing environment with tremendous potential for the production of distinctive cool-climate wines. They have 40 acres of vines planted on two distinct sites along the shores of the Minas Basin, an inlet of the Bay of Fundy, where hilly slopes extend the frost free period and provide excellent exposure. Natural airflow and incessant saltwater breezes off the basin provide an important moderating effect, especially critical during the winter months when temperatures dip below freezing. Throughout the growing season, these same cool breezes slow ripening, extending the hang times of our fruit. This microclimate creates balanced, full-flavored grapes that tend to have relatively low sugar content yet full phenolic maturity and beautifully retained natural acidities.

Dating back to the 1650's, the Dumangin's have always worked with the vines of Champagne, but it wasn't until 1890 when Hippolyte Dumangin created Champagne Dumangin in the 1er Cru vineyards of Chigny-les-Roses. Five generations later, Champagne Dumangin is producing an array of wines, from their classic feminine style to their newer, high-end cuvees. This Cuvee 17 is (almost) an equal blend of Chardonnay, Pinot Noir and Pinot Meunier, and is one of their newest additions to their line. Cuvee 17 is a natural style champagne, but this is serious wine! With 33% of the bottle consisting of reserve wine, it creates a fierce complexity and opulent notes of elderflower, banana, lemon cream and hints of brioche. The venerable 15-Year-Old from GlenAllachie has received an updated label which no longer looks like it came from the town of Bedrock as designed by a modern stone-age family. The new label hosts more readable fonts and a baby blue background.

First launched in 2019, The GlenAllachie 15 is said to be the "jewel in their crown" for the distillery. Bottled at 46%, the whisky was finished in puncheons and hogsheads that previously held Pedro Ximénez and Oloroso sherry.
