The 31st release of Two Brewers Yukon Single Malt is a Classic Release, bottled at 46%.
Blending Notes
"Lots of different whisky in this blend. First, just a bit of the sour blend we used for Release 22 (7%). Then another 40% is from a pair of very standard mashes we did in 2015, not much to report on those two. From there, we have 23% coming from two different priming batches (see barrelling for more info on what that means) and the last 30% coming from what we would call a standard Barley No Tails. No Tails is a process we’ve been using on occasion during distillations of the last several years, with this being the second time we’ve used No Tails whisky in a whisky release (R26 contained some as well). Basically we configure our run to keep the “tails” components that come through at the tail-end of our distillation runs completely separate from the alcohol collected during the middle of the run (the “hearts”). The intention is to produce a brighter whisky (tails tend to carry deeper, more earthy or medicinal notes). The separated tails are then run through the still by themselves to generate a second version of the same whisky mash, with those deeper flavour components heavily concentrated (we call that an All Tails Barley but there is no All Tails used in Release 31)."
Barreling Notes
"That little bit of sour character comes from a blend of various whiskies, mostly sour, that are being finished in Rye barrels, which are hopefully building a bit of a spicy complement to the sourness. The standard mashes that make up 40% of this release were both very standard, spending time in some new barrels from ISC and some xBourbon barrels. Then the two priming batches, one from 2015 and one from 2016, went through 2 or 3 brand new barrels each, spending about 30 days in each barrel to strip out some of the harsher flavours in the virgin charred oak, as well as a lot of not so harsh flavours. We do that to almost all of our new barrels so that the next whisky to enter the barrel doesn’t pick up anything overly harsh, and the process leaves the priming batches with a tonne of flavour but also a lot of maturation necessary for the flavours to come together harmoniously. We put these two priming batches into some well-used xBourbon barrels to allow all that flavour to mellow in a fairly neutral barrel, which they’ve been doing for the last 6 or 7 years. Finally, the No Tails Barley mash was held in brand new barrels from ISC for almost exactly 2 years, then moved to second use xBourbon barrels for the final 5 years of aging."
