Kilchoman 100% Islay 9th Edition
$129.99
Love the new look for the 9th edition of the 100% Islay, which is a vatting at 50% of Ex-Bourbon barrels from 2007 & 2009, matured more than 9 years. The 100% Islay line is from estate grown and malted barley, bottled on site. It is a more lightly peated expression of Kilchoman, produced from barley at 20ppm.
Andrew's Tasting Note
Nose: thick, creamy and malty; chewy barley with a flinty minerality; goat cheese and lemon juice; herbal and fruity with a touch of smoke and briny sea salt.
Palate: thick, oily, creamy and fruity; there is still a fresh flinty minerilty; apple crumble, heather honey and chewy malt; brown sugar, Panda brand licorice; loads of lemon: lemon oils, rinds and lemon drops; a touch of clean elegant smoke, wasabi and seaweed wafers.
Finish: long, malty and oily; fresh fruits, loads of lemon, creamy vanilla and clean smoke; a touch of seaweed and wasabi.
Comment: elegant stuff; Kilchoman is continuing to evolve nicely; 100% Islay is quickly becoming one of my favourite styles; the more lightly peated, floor malted barley, combined with the distillery’s long fermentation slow distillation is a recipe for complex young whiskies.
Distiller's Tasting Notes
Nose: Citrus sweetness, apricots and juniper and wild herbs.
Palate: Layers of lemon tart, vanilla, briny peat, smoke and dark maple syrup.
Finish: Long, clean, oily and intense as flavours fight for supremacy.
Producer Description
Each edition of the 100% Islay range can trace its origins back to the fertile soil of the Kilchoman barley fields. Here, on the windswept west coast of Islay, this unique single malt was caringly grown, malted, distilled, matured and bottled using the same farm-distilling methods as generations of Ileachs before us.

Producer Tasting Note

Taste: Caramel apple, subtly sweet toffee, butterscotch
Finish: Long warm finish, lingering honey sweetness
Producer Description
"Alberta’s arid climate lends itself to a unique spirit aging process for Single Malt Whisky, with variation in temperature and humidity throughout the year the spirit concentrates and ages more rapidly than in more tepid climates such as Scotland. This leads to a larger “angel’s share” with a loss of around 10% per year compared to the 3% typical in Scottish Single Malt, however, in this process we have found the alcohol content of our aging whisky rises during the aging process meaning the loss of water over alcohol. This will in turn increase extraction of flavour compound from the wood and develop into a more complex spirit in less time. We believe that this makes our spirit different than any other produced around the world."
Caitlin Quinn's Notes
"Comparing Batch 004 to previous batches I believe we have now landed on our signature flavour profile which will set us apart from other distilleries. Batch 001, 002, 003 are all very different from each other due to the barrels available from years the first three years of production. With the knowledge we have gained from previous batches I believe we have created a whisky, which will still vary from batch to batch releases, but that will always have a flavour profile characteristic to Eau Claire Distillery. This will hopefully be apparent to consumers so that when they finally get to try it, they will find comfort in the familiar flavour of Eau Claire Distillery Single Malt."

Andrew's Tasting Note
Nose:Â floral, waxy and honeyed with soft fruits; candied orange, persimmons and cantaloupe; fresh and doughy, French bakery notes; juicy malt; lemon and lime zest and subtle spices; muddled mint.
Palate:Â thick, honeyed and very waxy--classic Clynelish; still doughy with, more French bakery notes; decadent, bags of honey, baklava and agave nectar; the waxy tones build coating the palate with a floral top note; the fruits are varied, loads of citrus, melons, and baked white fruits; delicate oak spices towards the back of the palate with soft toasted oak.
Finish: floral, honeyed and waxy; long and coating; fading waves of decadence, fruit and oak spices; minty and fresh.
