About Rest & Be
"The name Rest & Be Thankful comes from the inscription on a stone made by soldiers who built a military road in 1753 in the West coast of Scotland; the road out of Glen Croe was so long and so steep that it was traditional for travellers to rest at the top and be thankful for having reached the highest point. Officially it is the A23 Trunk road. For centuries however it is known as the Rest and Be Thankful. Nearly 300 Years later, we want the joy of relaxing with a dram of a Rest & Be Thankful bottling, to have that same feeling of joy and satisfaction; one cannot always enjoy a dram at one of the most beautiful spots in Scotland but one can enjoy a taste of the unique beauty of Scotland anywhere in the world."

MELT IN YOUR MOUTH MINT
This 10 year old Speysider was matured in a refill barrel and comes in at 60.9%.
Flavour profile: Young & spritely.
Outturn: 215 bottles.
Panel's tasting note: "A sweet citric note at first before fruity aromas of pear and mango arrived and eventually, with a little time, we got baked banana split with mulled wine sorbet. Our first sip was like a mouthful of fizzy, whizzy cola flavoured popping candy followed by bittersweet orange marmalade.
With water we enjoyed an array of bakery delights; cinnamon swirls, glazed pecan Danish and pink cupcakes with rainbow coloured sprinkles whilst on the taste now - sweet, fresh and minty like vanilla fudge topped with a layer of crushed peppermint candy melting in the mouth."

SMOKY, MALTY MINERALITY
Bottled for the 2019 Islay Festival, this 10 year old was matured in a refill hogshead and comes in at 59.8%.
Flavour profile: Lightly peated.
Outturn: 282 bottles.
Panel's tasting note: "Imagine a flattering sweet peat smoke which was immediately apparent then add some oysters and scallops cooked on an open fire as well as winter waves sending their iodine rich scent into the salty, misty air and you should get the picture.
On the palate neat salty almonds, tangy lemon and lime zest floated in a tide of a ‘smoky, malty minerality’. With water a little more phenolic at first (petrol and diesel fumes), but soon turning sweeter with roasted marshmallows, and to taste a lightly smoked tuna salad with sweet relish, sweet corn niblets, mayonnaise and honey mustard."

OUT OF LEFT FIELD
Winner of Culinaire Magazine's "Best in Class" award at the recent Alberta Beverage Awards, this 21 year old from Islay spent 19 years in an ex-bourbon hogshead before being transferred to a 1st fill Oloroso hogshead for the remainder of its maturation, and comes in at 45.8%.
Flavour profile: Lightly peated.
Outturn: 175 bottles.
Panel's tasting note: "This one is really out of left field – unexpected and unusual but we all gave it thumbs up. The nose has fruity perfumes riding a tame wave of clean smoke – tar on a raspberry bush, fruity hookahs, salted blackcurrant, crab claws with grapefruit, waxed lemons and melissa – oh, and hospital corridors.
The palate is a sharp, citric smoke bomb; the usual soot, tar, ash and liquorice co-existing with astringent fruits – salty lemon, passion fruit, crab apples and blackcurrant; something slightly mentholic and medicinal, and then a seriously dry finish of ginger, wasabi, leather, humbugs and liquorice. Single cask samples do not always conform to the template. After 19 years in an ex-bourbon hogshead we transferred this whisky to an Oloroso hogshead for the remainder of its maturation."
G&M CC Upper Rosebank 1989

Producer Tasting Note
Nose: Intense honeysuckle and stewed fruit aromas are complemented by sweet honeycomb and fresh cut grass. Tart orange marmalade develops with undertones of raspberries covered in rich milk chocolate.
Taste: Floral and herbal notes transform into aniseed with a slight chilli edge. Sweet honey and orange zest flavours with traces of grass lead to roasted coffee and golden syrup.
Finish: Long with lingering spice, aniseed and a rich sweetness.
