JUST SO-OOH NICE:
A 21 year old sister cask of 35.62, bottled at 60.4% from another First Fill Barrel.
Panel's Tasting Note: "One or two panellists found the nose slightly musty, and some said slow to open, but we identified fudge, candy, toffee, vanilla, carrot cake, melting Demerara, hard fruity sweets, mandarins and upside-down pineapple cake. The palate was immediately big, stimulating and fab – lots of juicy fruits, sherbet, woody spices (including quinine) and slightly over-baked cakes. The nose became more interesting with water – now including gin botanicals and herbs (gentian, Chartreuse), almost salty even. The reduced palate was 'just so-ooh nice', though perhaps a tad bitterer with traces of mint in the aftertaste. The distillery takes the name of the county."
Drinking Tip: "One to enjoy while reading a good book."

CREAMY GINGER BEER
21 year old Speysider from a little know distillery named for the large body of water to its north. First Fill Barrel, 59.2%.
Panel's Tasting Note: "A slight nose prickle soon gave way to a warmth that one Panellist described as sage stuffed roast guinea fowl while another had honey covered jalapeños, fresh lime juice and dried cranberries. It was hotter than expected but rich, sweet notes of tagine-cooked rabbit with dried lemons & prunes, and salted peanuts washed down with Fentiman's Ginger Beer made for a satisfying taste. Fresher with water but also dried mango, coconut and papaya (think Julian Graves); there was wonderful aromas of cinnamon-toasted-marshmallow-bananas. While it was creamy and fruity to taste with the heat of ginger beer (alcoholic) we found it quite short. From Elgin's only distillery."
Drinking Tip: "To get the gastric juices flowing while enjoying main course and pudding."

SUNNY SPICED APPLES & VANILLA CREAM
Bottled at 55.6% after 11 years in a First Fill Barrel from the Speyside distillery which was the first ever bottle by the Society.
Panel's Tasting Note: "Soft warm buttery aromas greeted the Panel on the nose; sunny fields of barley, golden syrup covered porridge and honeycomb. A whiff of ginger, sweet cider and warm wood shavings put us in the mood for summer. It was hot, sweet and juicy to taste with barley sugar, ripe red cherries, vanilla, spiced baked apples and coconut & rum ice-cream. The addition of water made it apple-ier, think crumble, charlotte, filled doughnuts but it all with a creamy spiced vanilla edge to it, which came through on the palate which was sweet, smooth and juicy. Run by the Grant family since 1865."
Drinking Tip: "In contemplation of dessert."

A COOPER'S APRON ON A FISHING BOAT
This 20 year old Orcadian is from single hogshead bottled 53.5%.
Panel's Tasting Note: "We found the nose curious – toasted pine nuts, toffee, marmite on toast, orange, lemon (squeezed over fish?) cider vinegar, forest floor after rain and muted wood smoke. Fruity aromas dominated with water – apricot jam, hard pears and apples – also refreshers, wet sails, oilskins and hemp rope – strangely maritime. The unreduced palate brought a wee tear to the eye with deep resonances of treacle toffee, charred wood, burnt heather sprigs, leather and oak (someone suggested 'a cooper's apron'). The reduced palate evoked tobacco, Balmoral sauce, heather, oily ropes and 'smoked jelly babies' – leaving pleasant tingles after. The distillery stands above Kirkwall."

MON CHERIE
A 19 year old at 53% from a refill Hogshead distilled at BenRiach's closest neighbor.
Panel's Tasting Note: "A profound, very dark chocolate, nose, reminiscent of Mon Chérie cherry-liqueur chocolates, a hint of wild mint and creamy coffee. A creamy mouthfeel at full strength, with the bitter chocolate theme continuing, joined by light coconut and sultanas: lively but pleasant. Water reveals its Speyside origins – acetone and warm vinyl, creamy and buttery; vanilla ice cream with desiccated coconut. A soft and gentle texture; not as sweet to taste as previously, with traces of orange bitters and later, canvas or hessian; a long finish, with dry coconut in the aftertaste. The distillery used to be connected to BenRiach Distillery, which supplied it with malt, by a railway line."
Drinking Tip: "At dusk with a loved one and a box of hand-made chocolates."

Producer Description: "This single malt is the result of vatting together a few casks and illustrates very well the diversity and richness of whiskies coming from the Yoichi distillery. It is massively fruity, floral and deep!"
Distiller's Tasting Note
Nose: fresh and sweet. Subtle fruit notes (white peach skin) are very much in evidence, against a background of oily peat. An air of lovely sweetness emerges in which dried fruit (pecan nut), varnish and dried grass (hay and tobacco leaf) notes mingle.
Palate: rich and oily. Bitter-sweet notes (barley sugar and iodine) spring to mlind with remarkable precision. Soft, with flowers, minty aniseed, spices (clove and pepper) and chocolate all developing.
Finish: elegant, with chocolate (bitter chocolate and moccha), coffee and citrus fruit notes all arising. The retro-olfaction carries on, with notes of fresh fruit (white peach)."

Richard Patterson's Tasting Note: ""A dynamic fusion of aromas of blood oranges, crushed apples and pear, and hints of Bulgarian roses, jasmine and coriander. A heart of ripe mandarins, kumquats and pineapple is intertwined with highlights of Madagascan vanilla, creamy caramel and darkest Swiss chocolate."
