Milk & Honey, or M&H to their buds, should be on everyone's radar by now. Their range is sprawling, the team has an eye to innovation, and maybe most importantly...they know how to handle casks that have previously held wine (including port and sherry). This is unquestionably the influence of the late Dr. Jim Swan, whose legacy will forever be secure based on the STR process alone. But none of that matters unless you have good spirit. The Apex range consists of the more experimental end of the M&H portfolio, and the single cask range with the Apex range takes that a step further in terms of oomph and intensity. This single PX Sherry Butt (#2018-0900) yielded just 544 bottles at the ripe ol' age of 3. In this sort of climate, you don't need a lot of years to reach a state of complexity.
Natural colour, non-chill-filtered, and bottled at 56.9% abv.

It was then transferred into American oak hogsheads that previously held peated Scotch Whisky from an unnamed distillery in the Speyside region. Bottled at 40% ABV.

Whilst 2018 may well be Aline Beauné’s first ever solo vintage, she’s no stranger to winemaking in the Cote Chalonnaise. For 15 years she has been heading up the winemaking for Château de la Crée (a domaine based in nearby Santenay) when a few years ago she decided it was time to do it all herself. So when the Buxy co-operative’s lease on 5ha of her families 12ha of Montagny vines came to an end she jumped at the chance.
