What is Single Pot Still Irish Whiskey you ask? It is whiskey made using a combination of malted and unmalted barley. Why do this you ask? Why, to dodge unfair taxation, of course! The Malt Tax came into being in Ireland for a short time starting in 1785, enforced by the (insert expletive said in your best Irish accent here) English. The Irish, being Irish, decided that they didn't need to use malted barley for the entirety of the mash used to distill whiskey and started adding portions of unmalted barley. Necessity being the mother of invention, this eventually became a legitimate style of whiskey-making that is now not just celebrated but codified into law in Ireland with the Single Pot Still Irish Whiskey classification.

This low strength is more easily understood when you consider the whisky was matured in both Ex-Bourbon Barrels and more crucially Quarter Casks, 125L barrels. 93 to 95 points from Robert Parker's Wine Advocate for the 2015 vintage! The review: "The 2015 Guimaraens Vintage Port is a field blend coming in at 101 grams per liter of residual sugar. This was a tank sample when seen, out of barrel, the final blend and awaiting bottling in a couple of weeks. It should be released by the time this article appears. This is the blend Fonseca releases when there is no "classic" vintage declaration. It is usually intended to be approachable a bit earlier, much like a second wine. It seems pretty impressive this year, though. Round, big and lush, it might well be the best of the 2015s from the Fladgate Partnership, especially on the hedonism scale. It also seems to be the most concentrated of the Fladgate Partnership's wines this issue, full bodied and mouth coating. With air, this shows plenty of tannins underneath, too, but the mid-palate depth balances everything perfectly. Underneath that first rush of everything is intensely flavorful and fresh 2015 fruit."

The Paulaner Salvator with its strong, typically malty taste is the original Paulaner. The bottom-fermented Doppelbock-Bier unites the finest hops and dark barley malt. The Paulaner monks served Salvator as a replacement for food at Lent. Their most famous brewer was Brother Barnabas, who was the head of the Paulaner monastery brewery starting from 1773. Its original recipe is today almost the same as it was in Barnabas' time.
