One of the most sought-after Irish whiskies around: the 21-year-old single malt from Bushmills Distillery. It is triple distilled then matured in a mix of bourbon casks and Oloroso sherry before finishing in Madeira barrels. Bottled at 40% ABV.

"Our Bushmills 21 Year Old is a marriage of single malts matured for at least 19 years in hand-selected Oloroso sherry butts and bourbon barrels, then finished in Madeira casks for a further two years. Two whiskeys are matured for 16 years‚ one in a bourbon barrel and the other in sherry‚ and then they are married together in a sweet port infused cask. It’s a marriage made in heaven! Expect a warm Port-like sweetness on the back of the throat, that drifts up to form an almond marzipan fusion with hints of honey and praline. The finish is deep and jammy, with hints of dark chocolate.

This one says its first maturation was for 6 years in (probably in ex-Bourbon) before a 12-month finish in a Ratafia Champenois Barrel. So...a seven-year-old then, rather than 6? Who knows? Maybe they were short a day or two somewhere in there. Either way, we love Bushmills. Especially when it comes from the indie bottlers.
