Viña Mayu was established in 2005 in the Elqui Valley, the first quality wine producer to enter the wine business in the region since 1998. Mauro Olivier was one of the pioneers, planting vines and sourcing grapes from the different vineyards in the valley. He started working in his family vineyards for table grape production at a young age; years later he began working in Pisco production (the national Chilean spirit, made from white wine). In 2000, he planted the first Carménère and Syrah vines in the valley. 5 years later, in 2005, he decided it was time to embark on his own wine project, under the Mayu label. Mayu is an ancient INCA name for the Milky Way, literally meaning "creek of stars", and it is one of the best places on Earth for stargazing. The region lies 400 km (250 mi) north of Santiago, at the southern end of the Atacama Desert in the Coquimbo region, and rises to 2000 metres above sea level. These are great value wines produced from what is effectively a high-altitude desert. The hot arid climate allows for good ripening while the cold desert nights help preserve acidity.

Giorgio Flessati has won numerous awards for his magician-like talents as a winemaker in the challenging Chilean area of the Elqui Valley. The vines grow at an astonishing 650 meters (2,132 feet)! The results are magical indeed: Malbec may be Argentina's claim to fame but Mayu's high-altitude vineyards are suited to this grape. On the nose, it offers rose petal, violet, loganberry and white pepper notes, while the palate displays succulent blackberries and an appetizing spiced game finish. Originally from France's Medoc region, Carmenere has become Chile's flagship red wine grape. Mayu Carménère Gran Reserva is made from 100% Carmenere, a stunning red with luscious black fruit on the palate with notes of dried tobacco and espresso on the finish. The grapes are from the warmest part of the Elqui Valley located at the entrance of Vicuña at an altitude of 650m (2130 feet). The wine is fermented in stainless steel tanks and partially aged in American oak barrels. Best paired with hearty meat dishes and mature cheeses.

In 2007 the brothers purchased their first 5 hectares of old vine Malbec vineyards. The original vineyard dates back to 1914. Over time they have built up to 25 hectares in total. With this dedication, they aspire to develop, along with other local producers who maintain their vineyards with pride, the stewardship to offset the encroaching urbanization.
