Grapes are harvested by hand at the end of September, beginning of October, and are placed on plastic trays for drying. This process lasts until January and renders the once plump juicy grape to a raisin. The Tedeschi family boasts an almost four-century-long history in the wine business and has always believed in the richness of the Valpolicella wine-growing region where they grow their grapes. Corasco, a blend of 75% Corvina, 20% Refosco, 5% Raboso is made in the traditional Veronese manner of drying the grapes after harvest. The grapes are placed in crates for approximately a month and lose about 8-10% of their weight. This water loss naturally enriches their sugar content and enhances the colour of the wine. The result is a full-flavoured ruby red wine showing aromas of ripe red fruits (currants, black cherries) as well as vanilla and tobacco from the use of Slavonian oak. It shows great structure, lively acidity and well-balanced tannins. Enjoy with full-flavoured fare: hearty stews, roasted red meats, and strong cheeses.

This process lasts until January and renders the once-plump, juicy grapes close to raisins. The result is a wine of great flavour and style with a heady alcohol level, typically close to 17%. They are labour-intensive wines to make and drying the grapes greatly reduces the amount of juice which accounts for the high price. It displays notes of vanilla and ethereal aromas of sweet currants, blueberries and cherries. In Italy, it's traditionally served with a cheese course at the end of a meal.
