Founded in 1866, Bests' is a family-owned and operated winery with some of the oldest and rarest vines in the world. One of the great things about this Great Western Chard is the fact that the grapes come from some of the earliest plantings of Chardonnay in Australia. They are grown on a deep gravel hill with a west-facing slope and what this means is low yields and great intense flavors. After pressing, the wine spent 8 months in 30% new French oak barriques and achieved 30% malolactic fermentation with plenty of lees contact to encourage a rich, complex and textured wine. Aromas of flint and stone fruit are followed by rich and complex notes on the palate yet it remains elegant and subtle.

There's not a lot of Chardonnay planted in Tuscany, being a French transplant and all, but this example from one of our favourite Tuscan producers makes you wonder why they don't plant more. While this organic wine does not undergo malolactic fermentation, it's kept on the lees for an extended period for added complexity. Expect a lively and fresh white wine that can pair with goat cheese, arugula pizza, salads, or all on its own on a summer day when you need a lift!

If you're a fan of big, rich Napa Valley oaked Chardonnay and looking for more elegance and oak integration, this is the wine for you. Although Tether might not be as recognizable in Canada as some of the other famous Napa Chard labels, this is a small production winery to watch for (only 582 cases produced)! The Tether Chardonnay is full-bodied and balanced with a never-ending finish. The wine spends 17 months in French oak, creating notes of toasted coconut and lots of texture. Easy pairing with Fish & Chips, seafood in a rich butter or cream sauce, polenta, and especially with steak (with sauteed mushrooms) & lobster (with warm butter).

Most are unadorned with oak and as such there is nowhere to hide if the wine is not impeccably made or if the vintage was less than ideal. Domaine de l'Enclos has risen to the top of Chablis ranks in recent years, and for good reason. This is pure, mineral-driven Chablis from one of the best premier cru sites in Chablis. Serve it with oysters, salmon, Thai food, and sushi.
