The second release of Holyrood whisky to come to Canada is Embra, a peated single malt created from spirit matured primarily in First Fill ex-Bourbon, but also peated quarter casks, and new American oak. Embra is slang for Edinburgh, also a nod to the peated nature of the spirit. 43.6%, un-chillfiltered. ETA July/August 2024

Producer Description

"Edinburgh is the gateway to Scotland for many people and this is the idea at the heart of this spirit. The aim was to find that perfect balance between capturing the classic bold smoky flavours and textures of peated whisky while still being accessible to a new whisky drinker. When someone says they don’t like peated whisky, give them this. That doesn’t mean there isn’t something for the seasoned peated drinkers as we have all of the hallmark flavours and textures of a great peated whisky."

Andrew's Tasting Note

Nose: bright, fruity, and malty with clean smoke; juicy citrus, Five Alive Fruit Punch, and lemon juice squeeze on French crepes dusted in powdered sugar; the malt is chewy, balanced with vanilla and candied ginger; York Peppermint Patties; clean, delicate, almost ethereal smoke. 

Palate: smoky, sweet. and malty, with bright, juicy, fruity tones; more Five Alive Fruit Punch, lemon juice, and orange pith; the smoke is much bolder on the palate, but still clean, and elegant, adding an ashy mouthfeel; more powdered sugar, French crepes, and cooling York Peppermint Patties; the malt is chewy with a dried hay edged; more decadent spice, candied ginger and cinnamon sticks.

Finish: drying, ashy, and malty with clean smoke, honey, and loads of citrus; elegant. 

Comment: I was worried about the ABV on this one... 43.6% is below my preferred baseline of 46%, but this whisky doesn't seem to suffer from it, and it isn't chill-filtered; this is the second Holyrood whisky we've seen, and it is excellent, a sign of things to come!

Producer Tasting Note

Nose: Lemon zest, horse chestnut pith, with hints of peppermint and light hickory smoke.

Palate: Wafer Biscuits, dark chocolate mousse and notes of earthy highland peat smoke.

Finish: Light stew pears with a well rounded clean finish.
