"Thanks to numerous sales trip to the US, Gilles also discovers another passion for Bourbons. Main component in Bourbon is corn (at least 51% for Bourbon), Gilles prefers Bourbons with a higher Rye content. He has acquired several barrels with different content of rye to make his own blend, another Champagne Twist. Bourbon has to be aged in new barrels for the 1st 3 years of its life in the US."

"Following his discovery of Rye in Bourbons, Gilles decided to look for a good 100% rye spirit (no malt, no corn, nothing else). He discovers it after a trip to Prowein (Germany) by visiting the Zuidam distillery (Whisky Millstone) in the Netherlands. When Gilles acquires this whisky, its colour is still very light even after years of aging. The Ratafia Champenois is providing this whisky a lot more than its colour."

"Blue Run Trifecta Kentucky Straight Bourbon is a small-batch whiskey that demonstrates the delicate balancing act required when blending a high-quality base whiskey with the vivid flavors and aromas from older “wood heat” whiskeys. Trifecta starts with a base of finely crafted six-year-old whiskey, which makes up less than half of the composition of the total liquid. To add additional depth and character, Blue Run Whiskey Director Shaylyn Gammon blends that with two whiskeys aged in the upper reaches of their respective rickhouses, giving them what she calls “wood heat.”"

This Four-Grain Bourbon from Denver, Colorado's LAWS Whiskey House is aged for at least 3 years in new oak barrels before beating bottled at cask strength, which in this case amounts to 57.9%. The four-grain mash bill is composed of 60% Corn, 20% heirloom Wheat, 10% heirloom Rye, and 10% heirloom Malted Barley. That is a lot of heirlooms.
