Cask no 1.164  Cheshire cat whisky: 27 years old; refill hogshead; 52.1%; $184.99



'Sweet manna from heaven' - toffee, fudge, caramel, Toffifees, vanilla, honey - but more - tea chests, spice racks, aromatic smoke, burnt heather and pencils in a library - we could have smelled it endlessly.  Water opened up the fruit - sherbet, orange zest, peach, strawberry, tinned grapes, sweet sap and light smoke - panellists grinning like Cheshire cats.  The sweet, oaky palate had tablet, fudge and bread dough - by an open fire; but it also had a darker side - woody, earthy, drying, with sticky cassis and treacle.  Water brightened it up - Starbursts, Skittles and spicy Advocaat.  From the distillery always directed by John or George.

Cask No 64.35  Nicey, nicey, sweet 'n spicy: 21 years old; refill barrel; 55.2%; $160.99

The nose was finely layered - old-fashioned, expensive, floral perfume on top; apple sauce, gooseberry puree and a tin of fruity boiled sweets below that; the olfactory sub-strata inhabited by patent leather and old books.  The taste was sweet and hot - opinions included tom yam soup, mango chutney, HP Sauce, chilli, crystalllised ginger and leather.  The reduced nose added floral pot-pourri, plum chutney, polished sandalwood and Indian food (ginger, paprika, etc.).  The palate improved but the sweet and savoury profile remained steady - toffee, honey, sugar-coated fennel seeds, liquorice and salty lime pickle.  This distillery does not draw water from Loch Dhu!...

Kensington Wine Market Brews News - Edition #8

Westvleteren XII Arrival:




This is a special edition of the Brews News. As mentioned in earlier Brews News editions the long anticipated delivery of the rarest of Belgian Trappist Ales, the Westvleteren XII is arriving on Friday. In the past, this beer has been only available in small amounts by contacting the abbey directly and then picking up the beer on the appointed day and time. The monks would then sell you what they wished, rather than your choice.

For the first and possibly only time Alberta is getting a shipment of Westvleteren XII gift packs. How did this happen? The ancient monastery was recently found to have severe structural problems and it was realized that the monks needed a new monastery. To help with the cost, it was decided to make a one time offer for additional domestic and international sales. The brothers brewed one extra batch a month for a year to build up the necessary extra stock. The extra domestic stock in Belgium sold out in 48 hours in November 2011.

Those customers who submitted pre-orders for the gift packs will be able to pick them up after they are contacted by our staff. The pre-order price has been set at $74.99 for each gift pack. The regular floor sale price will initially be the same, but may be increased slightly in the future. The gift packs are limited to four/customer.

Westvleteren is a Trappist beer, meaning it must be made under the watchful eye of monks at a monastery or abbey. With an important part of the old abbey in desperate need of repair, and some of the buildings declared unsafe for occupation, it became clear that the monks were facing a considerable repair bill. After a thorough analysis it became clear that renovation works could not be considered, as the root cause of these problems was the foundation. The decision was made to build a new monastery.

Scotch Malt Whisky Society Canada July First Friday Releases

The Kensington Wine Market was home to two Scotch Malt Whisky Society Canada First Friday tasting July 6th, 2012. Two groups of Society members and guests had the privilege of sampling through the latest offerings by the Canadian arm of the world's largest whisky club. The July releases are as follows:



1.164 – Cheshire Cat Whisky – 27 Year – Refill Ex- Bourbon Hogshead – 52.1% - Outturn: 230 bottles - Panel's Tasting Note: " ‘Sweet manna from heaven’ – toffee, fudge, caramel, Toffifees, vanilla, honey – but more – tea chests, spice racks, aromatic smoke, burnt heather and pencils in a library – we could have sniffed it endlessly. 39.85 – A Whisky To Dream About – 29 Year – Refill Ex-Bourbon Hogshead – 57.4% - Outturn: 274 bottles. - Panel's Tasting Note: " We were drawn into this whisky, a dreamlike state descending on the panel. Our nostrils remembered bananas, toffee and custard in a rose garden. The blades of grass were red laces. Adding water saw us reading old leather books, while bananas, pineapples and lemons grew all around. Meanwhile our tongues recalled oak and spice with liquorice and plum skins before water introduced mangoes, kiwi fruits and a big box of apples made out of sandalwood. A dream so real, we could taste and smell every second of it. Wonderful!” Drinking Tip: “Perfect for an afternoon of daydreaming in the rose garden.” - $198.99 + GST

Introducing Duncan Taylor

Duncan Taylor is an independent bottler of Scotch whisky with a rich history and a bright future. The company was named Independent Bottler of the Year in 2009 by Whisky Magazine in their Icons of Whisky competition. The company is considered to have one of the largest collections of privately held whisky casks in the world. Originally founded in Glasgow in 1938, it was a merchant broker of casks. It eventually relocated to North East Scotland, near Huntley, when it shifted its focus from the brokerage business to bottling its own whisky. Today it is one of Scotland’s most respected independent bottlers, with a mind boggling range of whiskies. Kensington Wine Market has recently brought in seven Duncan Taylor expressions, 2 blends and 5 single malts:



Duncan Taylor  Black Bull 12 Year - 50% Malt/50% Grain – 50% - Distillers Tasting Note: Nose: Robust, chunky aromas. Chocolate, toffee, sherry, vanilla and lemon sherbet. Palate: Smooth, mellow and rounded.  Milk chocolate, treacle toffee, pears, green apples and lots of sweet vanilla. Duncan Taylor Dimensions Mortlach 1995 – Cask 7287 – 51.3% - 643 Bottles – Distilled: 11/1995 – Bottled: 02/2012 – 16 Year – My Tasting Note: Nose: red berry fruits, treacle sauce, new leather shoes and mulled fruits; candy apple, and firm spices with black licorice; Palate: fruity and spicy with a honey base coating ripe red  apples, crisp pear and rhubarb crisp; the spices are drying and a little  prickly, with some leathery notes and dried fruits; Finish: bone dry and spicy with dried fruits and evapourating honey. - $116.99 + GST
Duncan Taylor Dimensions Imperial  1995 – Cask 50054 – 53.1% - 283 Bottles – Distilled: 05/1995 – Bottled: 01/2012 – 16 Year – My Tasting Note: Nose: dusty and malty to start, it becomes more lush and floral with every whiff; barley sugar, sweet toasted oak and  white chocolate Hershey’s Kisses; soft fleshy fruit notes too, like peaches and dried apricots; Palate: very soft and sugary with more chewy barley, and sugary oak; the palate like the nose is quite floral and grassy with a surge of liquid honey and sweet spices: cinnamon hearts and candied ginger; light but oily/coating body; Finish: warming and more sweet/spicy oak, with the floral notes and white chocolat...
