The following is the Scotch Malt Whisky Society Canada's December Outturn which was tasted to great acclaim on Friday night in Calgary. All of these whiskies are available for in-store sampling and purchase. Two have already sold out!

50.49: PUDDING IN A GLASS - 55.8% - 21 Year - Refill Ex-Bourbon Barrel - Outturn: 136 Bottles - Panel's Tasting Note: "An unusual example of the make from our most southern distillery, the firstimpression is of ‘fig pigs’ (dried figs coated in pastry), then dough with pecannuts and raisins, pumpkin pie and blueberry pie, both with golden, butteryshort-crust pastry. The taste is Golden Syrup sweet; the texture mouth-coating,with chewed pencil in the aftertaste. Curiously, water introduces the aroma ofthe paint on the outside of the pencil, then syrup tart with strawberry foam andclotted cream, with traces of tinned peaches. 41.52: BOILED SWEETS & PLAY-DOH - 59.1% - 8 Year - First Fill Ex-Bourbon Barrel - Outturn: 226 Bottles - Panel's Tasting Note: "This is remarkably mature for its age - easy drinking and accessible – although itcomes from a distillery close to the Spey which produces a robust, meaty make.A clean, fresh aroma, with pineapple chunks, strawberry boiled sweets andBakewell tarts (more almond than pastry); a smooth texture and more boiledsweets, cooling strawberry jam and berry fruits. With water it becomes moreestery and ‘childish’ – Playdoh, sweet talc, wax crayons, bonbons dusted withicing sugar, strawberry vanilla ice-cream with caramel sauce. 76.93: MAGIC FROM THE WEE WITCHIE: 55.8% - 16 Year - Refill Sherry Butt - Outturn: 584 Bottles - Panel's Tasting Note: "The nose starts off with waxy and toffee notes followed by a very expensivefurniture polish on an antique table. It then pulls you in with aromas like dates,figs and almonds before turning sweeter, dark cherries, Terry’s OrangeChocolate and marzipan. To taste it is big, rich, mouth coating comments likecherry cough syrup, blood oranges, mixed nuts and dark chocolate with spices(German Lebkuchen) were noted. Careful adding water; the nose changes torich honey, chocolate pralines studded with nuts, dried oranges and limes becomingfruity, peaches and oranges, with time. Scotch Malt Whisky Society Canada November Otturn

Our November Outturn was released at two sold out tastings tonight. For the month of November, these are the Scotch Malt Whisky Society Canada's new releases:

 


SMWS 30.70: Venus in Furs - 52% - 22 Year - Refill ExBourbon Hogshead - Outturn: 218 Bottles - Panel's Tasting Note: "The Panel drew images of a foxy silver haired lady; wearing a musty fur coat. Onthe nose the panel was pleasantly greeted with scents of a traditional perfumecontaining musk. Then with a gentle caress on our cheek with butter soft leathergloves. On the palette we found the rich flavour of well matured Dundee cakewashed down with blackcurrant cordial. With water on the nose we found therewas a medley of orange bitters mixed with dark chocolate’ high in cocoa contentto the point of being almost gravelly in consistency. One panellist found themselvesstuck in a hedge with hooves, horse shoes and fresh mud galloping awayon the finish! It was almost all over too soon." Drinking Tip: "Pre dinner drink whilst dressing up." - $170.99 + GST

SMWS 35.65: Cornish Clotted Cream Ice Cream - 60.3% - 10 Year - Refill Chardonnay Hogshead - Outturn: 267 Bottles - Panel's Tasting Note: "After the initial whiff of a struck match and a distant firework the nose turnedfresh and floral like a rose bush after an April shower. With time deeper andwarmer aromas appear like beeswax, vanilla pods, and chocolate chip cookies.The taste is creamy and buttery reminiscence of honey and maple syrup onFrench crepes. With the addition of water we enter a cake shop with pastries,fruit cakes, sherry trifles and raisin loaves all covered in icing sugar. The tastedoes make you smile like eating a hot fruit raisin buttered scone or CornishClotted Cream Ice Cream dipped in dark Bournville chocolate. SMWS 16.32: Leather Armchairs & Old Wardrobes - 57.2% - 10 Year - Refill Port Pipe - Outturn 796 Bottles - Panel's Tasting Note: "The nose was certainly savoury (salty bacon, roast parsnips, beef in red winereduction) but also sweet (buttery croissants, marmalade, toffee) with hints ofcoke embers, engine rooms, tobacco, struck match, floral notes and ‘oldwardrobes’. The palate was rich and substantial, oozing unctuous sweetness,but with balancing spiciness – maple syrup, treacle and a Jamaican Christmascake. Scotch Malt Whisky Society Canada First Anniversary Releases

The Scotch Malt Whisky Society Canada is now a year old. At two events in Calgary on Friday October 19th and Edmonton Saturday October 20th we launched 12 new cask strength, single cask Scotch whiskies. Here is the mid October 2012 SMWS Canada Outturn:

25.63: Poire et Poivre - 21 Year - 59.8% - Refill Ex-Bourbon Hogshead - Outturn: 257 Bottles - Panel's Tasting Note: "The nose suggested fermenting beer – still life on the lid of a washback – greenapples, a pear, a peach, some lemon puffs, a stone bowl containing sweet pipetobacco and a bunch of fresh spring flowers. Pears again on the palate (ripernow), also some fizzy fruit (sherbet lemons), more flowers (this time from highsummer) and definite peppery spice (‘poire et poivre’). The second nosing hadmild liquorice (sherbet dib-dabs) tobacco leaf and pear and nettle sorbet. Thereduced palate gave light, pleasant flavours of bergamot and floral perfumes; amild tingly finish. From Falkirk’s sadly now defunct distillery." Drinking Tip: "Summer time dram - perhaps to accompany tea in thegarden." - $174.99 + GST - Rare Closed Distillery!
9.66: Melo-dram-atic - 14 Year - 56.5% - Refill Ex-Bourbon Hogshead - Outturn: 356 Bottles - Panel's Tasting Note: "The fragrant nose wafted Murray Mints, Blackpool rock, leather, apple, darkchocolate, gingerbread people with currant eyes and a man’s shaving cupboard.With water it became a fruity dessert served in an actor’s dressing room (sweat,hot light, dust, grease paint remover). The palate, however, was sweet andperfumed – with woody, spicy, men’s cologne (the actor now freshly shaven);finishing slightly nippy and drying with cold black tea tannins. The reducedpalate had cherry lips and Juicy Fruit chewing gum; sweet, spicy, playful warmth(was that actor Kevin Spicy?) mingled witdh serious pleasure. Distillery founded bythe Grants (not Cary)." Drinking Tip: "Pre-theatre, interval or back stage." - $126.99 + GST
63.27: Jar Jar Binks in Trouble Again - 5 Year - 62.3% - Second Fill Sherry Butt - Outturn: 641 Bottles - Panel's Tasting Note: " Remarkable for its age, the nose suggested unripe green fruits, stewed rhubarb,lemon bonbons, mint, golden syrup and Werther’s butterscotch. It reminded usof grappa, tequila, pear schnapps etc. The substantial palate delivered applesours, lime fruit pastilles and red cola – a caustic/sweet combination so juicy ithad us slavering like Boss Nass berating Jar Jar Binks. The reduced nose hadapples sautéed in butter and raspberry jam pips – and woody, earthy, floral notesinspired the gardeners among us. In advance of Friday night's First Anniversary tasting where we will launch 12 new whiskies, here is the list of the seven whiskies we launched on Friday October 5th. Maybe this will get your appetite whet for Friday!



106.18: Bottled Essence of Summer - 56.2% - 27 Year - Refill Ex-Bourbon Hogshead - Outturn: 197 Bottles - Panel's Tasting Note: "Our noses found poignant floral perfumes, shrubberies and pine tree freshness.We also detected ripe fruits (apple, mango), candles, cinnamon, clove andhoney on buttered toast. The palate was chewy and delicious; fragrant wood,flowers and tropical fruits (lychee, apricot, passion fruit) mingled with sweettoffee flavours to draw sighs of contentment from the panel. The reduced nose,with tutti-frutti ice-cream, lime, sawn wood and aromatherapy oils made usthink of warm summer nights. The palate now carried rose and lemon-flavouredTurkish Delight with stem ginger spicy warmth in the tail-flick. The distilleryhouses the spiritual home of Johnnie Walker." Drinking Tip: "Perfect dram for the first day of your holiday." - $197.99 + GST
105.16: Mulled Cider & Beef Goulash - 55.4% - 28 Year - First Fill Sherry Hogshead - Outturn: 134 Bottles - Panel's Tasting Note: "Savoury, spicy aromas of beef goulash, Night nurse, cranberry concentrate,maple-cured bacon, nutmeg, root beer, red grapes, Stollen, lamb gravy, carawayand rye bread made us all hungry. The palate, not as savoury as expected wasthick with cedarwood, spiced apple tobacco and mulled cider. With water wenow smelled celery, mushrooms, plum chutney, sesame, roast turkey &redcurrant jelly although a sweetness of wild strawberries. To taste it was nowminty, dry and chewy with a spiced milky coffee and musty note. We all agreed itwas better neat. From the first purpose built distillery in the twentieth century." Drinking Tip: "In place of mulled wine." - $200.99 + GST
39.83: Yummy & Mouth-watering - 53.9% - 28 Year - Refill Ex-Bourbon Hogshead - Outturn: 197 Bottles - Panel's Tasting Note: "The inviting nose was intensely floral (chrysanthemums, dahlias, elderflower,pot-pourri) but an array of other aromas (mocha, almond cakes, Crunchie bars,painted wood, blueberry bubblegum) suggested a coffee shop and book shopcombination. The palate was rich and warm, giving thick heather honey, sweetcoconut, Sunday roast, flower salad and varnished wood – we were bowledover. The reduced nose continued beautifully perfumed with the coconut ofgorse flowers and sweet and sour Peking duck. The reduced palate becameyummy and mouth-watering, with vanilla, meadowsweet and perfumedelderflower champagne. The distillery, dating from 1824, sits on the easternedge of Elgin." Scotland September 2012 – Day 3 – Glencadam, Tomintoul and on to Glendronach

My first stop this morning was Glencadam, established in Brechin in 1825 shortly after the passage of the Small Stills Act. The distillery’s footprint has changed little over the following 187 years. Many of the doorways seem built for a race of people 5ft tall, with many tight corners and steep stairways. The distillery, as with many in Scotland these days is operating flat out producing 24/7 in anticipation of continued growth in demand. This year the distillery will produce 1.4 million liters of spirit. The company had been flirting with introducing some major upgrades to the distillery with an eye to doubling its production, but the funds will likely be spent on Tomintoul where the company can more easily and drastically increase production.

The distillery’s cast iron washback is gravity drained which takes longer, but it produces a cleaner wort and as a result a more vigorous fermentation. There is an additional benefit to the cleaner wort, it leaves less residue in the still and means they don’t have to be cleaned as often. The fermentation at Glencadam is short, only 40 hours, compared with 56-68 hours at some other distilleries. This may also come down to the strain of yeast, the type of washback (Glencadam uses stainless steel washbacks) and the fact the distillery begins adding its yeast after the first few thousand of 24,000L of wort have bee filled into them.

The distillery was purpose built over a small burn for two purposes: firstly, for production; but secondly, and more interestingly for power generation. Built on a slight hill, much of the distillery has been laid out to take advantage of gravity. In 2010, during heavy rains, a culvert under the distillery failed flooding it in a matter of minutes. Suffice to say water no longer runs under the distillery! The distillery is located right in the town of Brechin, which has grown around it with the football(soccer) pitch on one side and a cemetery on the other. Surprisingly, given its urban location, the distillery was only fenced off in 1993.Currently the distillery is sitting on 23,500 casks on site.

Glencadam New Make Spirit – 68% - My Tasting Note: Nose: malty and floral with fine French soaps; Palate: a big surge of malt, a surprising creaminess, more floral tones and unsweetened apple cider; Finish: drying, applely and metallic (copper).
Glencadam 21 Year -46%-My Tasting Note: Nose: marzipan, Tootsie Roll, apple crumble, some floral notes and Graham Waffers; Palate: sweetand surprisingly malty with cooked raisins, caramel sauce, brown sugar and browningwhite fruit; Finish: coffee grounds, more browning fruit and cooked raisins. – Believe this will be available in Alberta soon!
