Part of the Milk & Honey Distillery's Elements Range, this single malt was matured in ex-Bourbon before finishing in ex-Red Wine Casks (STR Casks).
Producer Description: "Ex-red wine casks that were sourced from Israel's finest wineries were picked for this part of the Elements trilogy. The Mediterranean’s climate, variety of soil types, hot sunny days and cool nights bring a spicy and unique flavor to Israeli wine – and in turn, our casks. The wine casks used in the Elements Red Wine are a celebration of local terroir, curating a floral single malt with notes of raisins."

Producer Description: "The Atlantic meets the Mediterranean. This whisky was matured in casks from Islay, that soaked in smoky aromas and salty flavors, and was then blended with ex-bourbon barrel-aged single malt. The Elements Peated integrates the fruity notes of the new make into the casks' typical Islay peaty notes; the result is a delicate, rather mellow, and lightly peated whisky."
Milk & Honey Levantine Gin

The first Israeli gin in Canada, comes from the Milk & Honey Distillery in Tel Aviv. It starts with the same malted barley base as the single malt, mashed in house and distilled in the same pot still. The botanicals are all source from Tel Aviv's Levinsky market.
Producer Tasting Note
Nose: Delicate notes of juniper berries, lemon and hyssop.
Palate: Delicate botanical tastes, with juniper and lemon being the dominant notes.
Finish: Medium-bodied, a little oily. Long, lemony finish.

"Our gin starts the same as our single malt series – 100% pure malted barley that’s mashed in-house and distilled in our pot still. Then we add a heap of Juniper and botanicals, hand-sourced from Tel Aviv's Levinsky market: hyssop, lemon peel, orange, chamomile, verbena, cinnamon, and black pepper. We then let the botanicals rest in the still for 48 hours and then distill for the third time in our 250L pot still, for extra smoothness. 46% abv./92 proof."

The first single malt, from Israel's first distillery is composed of whiskies matured in ex-Bourbon & STR Casks before bottling at 46%. The whisky is at least 3 years of age, but in Tel Aviv's hot climate, that supercharges the maturation process. Produced from unpeated malt and bottled without colour or chil-filtering. Kosher certified!

“To create this whisky, we travelled all the way to Jerez, Spain to oversee Oloroso and Pedro Ximenez sherry made especially for us. The casks, once filled with quality sherry and seasoned for one year in Jerez, were brought to the distillery to mature our New-Make spirit for a wonderful complex whisky.
