Located on the shores of the Mediterranean in the Provence region of Southwest France, this unique wine transcends what is traditionally done in the area. Made from the grape varietal “Tibourne”, which is a very thin-skinned grape which is becoming exceedingly rare, was originally grown in Mesopotamia before being cultivated by the Greeks. At Clos Cibonne, these grapes are Goblet trained and the Vineyards directly face the sea. This allows for the grapes to be constantly blasted and dried by the winds of the Mistral which makes sure that the grapes aren't affected by Grey Rot.  

This wine is made with 90% Tibouren and 10% Grenache, fermented in stainless steel, then aged on lees under Fleurette for 12 months in a large wooden vat.

In 2006, Lionel took over the reins at Domaine Faury, comfortably stepping into the role of vineyard and cellar manager to build off his father's hard work and take the domaine to new heights.

The distillery has never really cask much of a shadow here, but we are seeing an incredible range of releases available all of a sudden. Better still, a range that spans all ages and a whole load of unique expressions. If you're not a Tomintoul person, maybe now is the time to dive in. Truly an underappreciated whisky. 

Producer Note: "Our 17 Years Old Pedro Ximénez Sherry Cask Finish was distilled in 2005 and matured initially in American ex-bourbon oak casks before being finished in the finest Pedro Ximénez Sherry butts from Fernando de Castilla in Andalucía, Spain. These sherry butts perfectly complement Tomintoul Single Malt by imparting rich fruit flavours, which enhance the character and complexity of our whisky."
