"Caitlin’s NotesBatch #005 is a throwback to Batch #002 (many people’s favourite batch) with the reintroduction of ex-sherry casks within this blend. As with other batches the use of ex-bourbon and new European (Hungarian oak) barrels is still apparent but complemented by the increase in sherry content in this batch vs batch #002. Notes of cherry and peaches on the nose are apparent from the influence of the sherry casks with the underlying apple flavour from all our batches manifesting as a stewed apple aroma coming through in this batch. Batch #005 is an outstanding addition to our whisky portfolio and I believe this will turn out to be a lot of people's favourite batch so far. I’m excited to see the feedback from this release and hope everyone loves it as much as we do at Eau Claire!."
