JUICY, SALTY AND SOOTY
An 18 year old from Islay bottled at an impressive 60.2% from refill butt
Flavour profile: Heavily peated
Outturn: 189 bottles
Panel's tasting note: "Many would say this is the most pungent of the Islay malts, and certainly this cask supports the claim. Carbolic and Coal Tar soap, road tar and soot are the first notes, backed more subtly by Brazil nuts, raw monkey nuts and pine nuts, then tools in a garden shed, ‘including lawnmower and grubby dungarees.' The taste is very sweet, salty and very smoky: ‘smoked hot-dog, with barbecue sauce,' evolving into oysters with clamato sauce. More medicinal with water (foot baths, wet suits and rubber dinghies); not quite so sweet to taste and less salty, but still bags of sooty smoke."
Drinking tip: "Last of the day"

NIGHT NURSE NIPPED BY PIRANHAS:
A very rare 12 year old Japanse single malt from a closed distillery matured in a Refill Sherry Butt and bottled at 63%.
Profile: "Deep, rich & dried fruits."
Outturn: 553 Bottles
Panel's Tasting Note: "We found an amazingly complex nose – interesting sweetness (salted caramel, barley sugars, ginger snaps, melted chocolate) blended beautifully with laurel hedges, lacquered wood, dunnage warehouses, porridge, roasted hazelnuts, cherries and cigarette packets. The palate was drying, spicy, sweet and perfumed – we identified dark chocolate, fig rolls, clove, cinnamon and ginger spice, orange peel, Night Nurse cold medicine, tobacco, tonka beans and cooked ham – definitely interesting; we wanted more. The reduced nose was slightly more herbal (camomile, sage, eucalyptus) while the palate seemed sweeter, but still with miniscule piranhas of warm spice nipping at our tongues. The distillery is located in the Japanese Alps."
Drinking Tip: "To provide an invigorating spark-up."

PEPPER CROP-DUSTED OVER ORCHARDS
An insanely floral 12 year old Speysider matured 12 years in a 1st fill barrel and bottled at 55.8%
Flavour profile: Spicy & sweet
Outturn: 115 bottles
Panel's tasting note: "Our noses were tickled by pepper, mustard, straw mats and sawdust, but it settled to jellied fruits, blackcurrant chews, orange jelly, fruity toffee, tinned pineapple and syrup sponge with custard. With water, those black pepper clouds parted and the sun shone on ripened orchard fruits (apple, pear, peach, apricot, cherry). The palate offered a warm peppery tingle, hinting at nutmeg and chili; we also found honey, toffee, fruit pastilles, blackcurrant, lemon, ice lolly sticks and some biscuit-y dryness. In reduction, fruits of the forest were balanced nicely by hints of humbug, pepper, liquorice, leather and tea."
Drinking tip: "A holiday dram - but not abroad and not four star - more like camping or RVing (unmatchablejoys and interesting challenges)"

A DELICATESSEN SHOPPING BASKET
This Islay whisky bottled at 55.6% is from a refill sherry butt from a parcel of casks filled on September 25th 1997
Flavour profile: Lightly peated
Outturn: 609 bottles
Panel's tasting note: "This had all the makings of a great feast of prosciutto ham, sundried tomatoes, roasted fish skins, sushi and brown sauce. A leather jacket stuffed into a canvas bag and a pouch of pipe tobacco. A damp forest with recently burnt heather and a shale beach. Much discussion ensued on the topic of ham - honey glazed or German peppered? We were all in agreement that it had delicious foodie characteristics in a warm plastic box. Lavender lip balm and orange peel were detectable above the blast of tar, sea spray, incense sticks and wet burlap."
Drinking tip: "Drink neat or only a splash of water"

PLAYING "SEA BATTLE" IN THE GARDEN
A very elegant 25 year old from the Speyside, matured in a refill butt and bottled at 55.6%
Flavour profile: Juicy, oak & vanilla
Outturn: 534 bottles
Panel's tasting note: "One Panel member found himself on the gun deck of an old wood-hulled warship with smells of ash, gun powder and spent cartridge, whilst others, more peacefully, are turning earth in their herb garden. The taste is hot and fiery – the battleship is in action – or we take a break from gardening on a sunny afternoon and enjoy rye bread dipped in olive oil. With water we take a rest sitting in a wicker chair on a warm cedar deck surrounded by pots of sage and heather. The taste now juicy, warm and pleasant like waffles with runny vanilla custard."
Drinking tip: "Somehow obvious: whilst playing ‘Sea Battle’"
Springbank 12 Year Cask Strength

Distiller’s Tasting Note
Nose: A range of aromas: Marmalade - Orange zest, zingy, honeycomb and highland toffee, hints of liquorice and mint chocolates. Let it breathe to reveal a true Springbank style.
Palate: Very robust & mouth coating, subtle hints of white pepper. Grassy and zesty as the nose suggests. Perfect balance of sherry and then vanilla and oak flavours.
Finish: Salted pretzels & peat. Cocoa - Dark chocolate and coffee beans.”
Arran 10 Year Gift Pack
$62.99
Arran's award winning 10 year old has long been a favourite of ours. It is often our recomendation as a "gateway", entry level or breakfast malt. Bottled at 46% without colouring or chill-filtering this gift pack is priced the same as the 10 year with two glasses.
From the Distillery: "This gift pack is perfect for any Single Malt fan, makes an excellent gift and is fantastic value. Included is a 70cl bottle of our award winning 10 year-old Single Malt accompanied by two beautifully engraved customised nosing glasses for your enjoyment. This is the brand new presentation of our 10 year-old Malt, released in autumn 2014."
Distiller's Tasting Note
Nose:The initial rush of rich vanilla sweetness gives way to the fruits of slow distillation – kiwi, banana, cantaloupe melon – with just a dusting of cocoa powder. It is undoubtedly complex and yet the aromas are in complete harmony with the malt.
Palate: A touch of cinnamon adds a spicy edge to the soft and sweet texture which captivates the palate. The classic Arran citrus notes have rounded with age and reveal new depths of character against a background of sweet oak.
Finish: It drifts over the tongue like golden syrup and fades ever so slowly to tempt another sip. This is a beautifully made whisky.

WE ♥ WHISKY!
A 27 year old Speysider from a refill hogshead at 49.5%
Flavour profile: Sweet, fruity & mellow
Outturn: 203 bottles
Panel's tasting note: "This reminded the panel of delicious buttery toast with slabs of marmalade and raspberry jam. Mint toffee and a lively lemon sherbet took time before more creamy rhubarb and custard took over. It made all participants a little dreamy, we all felt relaxed as if we’d been on a tropical holiday. Water opened more waxy apple, greengage and lemon hanging from the tree. The sweet, earthy orchard carpet was laden with pine needles. It became extremely juicy and the panel were in no rush. Roasted sweet potato sprinkled with white pepper and macadamia nut concluded this enjoyable journey."
Drinking tip: "Stop the clocks"
