MAGIC CARPET IN A SWEETIE SHOP

This 13 year old Japanese whisky is from a closed distillery bottled at 55.1% after maturing in a 1st Fill Sherry Butt.

Panel's Tasting Note: "The nose was a visit to a candy shop – rhubarb and custard sweets, fruit salad chews, parma violets, sherbet straws, flying saucers and aniseed balls. The unreduced palate had a sweet, sticky intensity, containing cough syrup, peppermint, molasses, Garibaldi biscuits, orange, papaya, mango and dark summer fruits. Water did not diminish the personality at all – the nose now found dark chocolate, orange oil, caramelised brown sugar, figs, dates, burnt heather and a grandfather clock interior. The palate took us on a magic carpet ride from Morocco (spices, apricots, raisins, almonds) to Andalucía (sherry bodegas). From the ‘playing card’ distillery’s final year."

Drinking Tip: "Autumn in Andalucía, the wind coming from Africa."

SOMETHING FOR EVERYONE

This 13 year old Orcadian dram is from a First Fill Barrel at 61.2%.

Panel's Tasting Note: "Where do we start - sweet like an apple flan or a Garibaldi biscuit or heather honey, savoury like roasted tomatoes with basil or a Miso soup or Bovril. At the same time briny, smoky, sooty and ashy with perfume notes of exotic cedar. The taste is a mouthwatering mixture of toasted peanuts, treacle tart with clotted cream and a balsamic tahini dressing over a salad with toasted sesame seeds. Water adds maritime aromas of fish boxes, driftwood and seaweed as well as sea salted dark chocolate and berry Pavlova topped with vanilla whipped cream. The taste is now burnt toast with salted butter and marmalade as well as garlic Indian Naan bread."

Drinking Tip: "Before, during and after a barbecue on the beach."

ZESTY GINGER LIME COOLER

This 16 year old Speysider was matured in a refill hogshead and bottled at 55.4%

Flavour profile:  Spicy & sweet

Outturn:  248 bottles

Panel's tasting note:  "The initial nose neat has the freshness of green saplings and cut grass soon followed by fruity notes of apricots and peaches. With time deeper aromas of old-fashioned rose water perfume are taking centre stage. The taste starts off similar to the nose; green and grassy, slightly cereal (Weetabix) and then fruity (now apple slices). The medium length finish is refreshing like a ‘Zesty Ginger-Lime Cooler’. With water we are preparing a fruit punch with strawberries, pineapple, peaches and cherries. The taste is now clean and fresh like minty grapefruit sorbet and Jasmine iced tea – a well-balanced sample from the distillery established in 1836 on the Recherlich Farm at Ballindalloch."

Drinking tip:  "Looking at a blue sky and the shapes of white clouds weaving imaginary stories"

DESSERT WINE AND SMOKING JACKET

A 23 year old Speysider from a refill hogshead at 49.5%

Flavour profile:  Sweet, fruity & mellow

Outturn:  226 bottles

Panel's tasting note: "Like well-aged Sauternes this complex whisky displays a nose of honey-covered toast, chocolate with dapples of coconut and strawberry. The taste delivered a decadent American breakfast; crispy bacon, pancakes and maple syrup. The addition of water created the notion of supper as scents of grilled pork chop were followed by Eton Mess for dessert.  Aromas of toasted cedar wood were interspersed with ginger. The palate offered the panel darkly roasted coffee, ginger cake and brown sugar coated peach all consumed within a draughtsman’s office. A decadent offering from this Elgin distillery."

Drinking Tip: "Cigar in hand and nose upturned"

BREATHE IN LONG!

A 25 year old Speysider from a refill butt at 52.1%

Flavour profile:  Old & dignified

Outturn:  416 bottles

Panel's tasting note: "The first nose made us all feel very calm and relaxed just like aromatherapy or Zen meditation. A walk through a garden filled with mellow aromas of summer flowers combined with a soft woodiness of cedar and balsa wood gave us the feeling of a sense of tranquillity. The taste is soft and smooth, honey dripping from a wooden spoon, melting chocolate and a creamy homemade lemon curd. With the tiniest drop of water the aroma is of apple cake with rich warm vanilla custard sauce and in the taste a great balance of flavours - sweet, floral and perfumed as well as slightly dry and spicy. Soporific!"

Drinking tip: "Reading Beatrix Potter in the garden"

YO-HO-HO AND A BOTTLE OF THIS!

A 21 year old Campbeltonian whisky matured 21 years in a refill sherry butt

Flavour profile:  Oily & coastal

Outturn:  407 bottles

Panel's tasting note: "The nose was both interesting and appealing – appeal from sherry-soaked Christmas cake, honeyed apricots, balsamic glazed pears, spun sugar, dark toffee and gorse flowers; and interesting thanks to benevolent smoke, tobacco, burlap, old sailing ships and new cars. The palate got us quite animated – cinnamon, nutmeg and iced gingerbread, molasses, toffee apples, honey-glazed ribs, salty limes, sweet sherry, prawn tempura and ‘biting a leather steering wheel.' The reduced nose – ‘Tim Burton gothic candy floss’ and ‘Sixteen men on a dead man’s chest’. The palate now gave honey, toffee and vanilla, plus wood, leather and ash. From ‘Scotland’s Glen.'"

Drinking tip: "Good dram for your last request (of the evening)"

RETRO AND KITSCH

This 12 year old Speysider from a 1st fill barrel is 57.2%

Flavour profile:  Young & spritely

Outturn:  232 bottles

Panel's Tasting Note: "This dram created a collective memory for the panel, like stepping back to our grandparents’ home. On the nose we found Kahlua, homemade lemonade served from the cocktail bar polished with Pledge. Then stewed apple, porridge with honey and for a treat, pear drops and coffee chocolates. At full strength it delivers a lip-tingling clip around the ear with root ginger and chili. Recollections of fresh cut grapefruit with a sugar crust, Jamaica loaf served with melted butter and custard with stewed fruit. Grandfather’s old vinyl records and warm leather car seats completed the picture. Happy days."

Drinking Tip: "When mulling over happy memories."
