MANZANILLA SHERRY TRIFFLE
This 22 year old Lowlander is from a famous closed distillery bottled at 59.8% after maturing in a Refill Hogshead.
Panel's Tasting Note: "The nose neat reminded some of us of an old school study whilst others imagined an elegant ladies morning room. Both have in fact similar images; leather chairs and sofas, old leather bound dusty books, thick Persian oriental antique rugs, fresh cut wood on either side of the fireplace and the scent of potpourri and dried flowers in the air. The taste lively, peppery and sweet. Fruity flavours of blackcurrant, raspberry and blueberry together with Indian spice mix and salted limes. With the addition of water aromas of a herb garden surrounded by a pine forest and the flavours are Manzanilla Sherry trifle, pink grapefruit juice and in the finish liquorice allsorts."
Drinking Tip: "Before Sunday lunch."

Bottler's Tasting Note
Nose: Distinctly old Islay! Softly phenolic, salty, leathery & malty with a whisp of smoke.
Palate: Oily & mouthcoatingly peaty sweet with later ash, soof and soft chewed leather.
Finish: More ash and soot show through subtly around its smoked typical old Islay style.

Andrew's Tasting Note
Nose: at first some melon and tropical fruits, quickly displaced by clean smoke and grassy malt; some leather, dark fruits and spices linger; some of the classic honeyed floral notes.
Palate: a tad punchy, and very fruity, excellent balance, building smoke and spices with a base of creamy vanilla oak and honey; some dark fruits and leather.
Finish: leather, tobacco and chocolate with some malt and citrus fruits; medium finish."

SMOULDERING, BROODING & ALLURING
This is very rare Irish single malt whiskey and only a very limited stock of bottles have come to Canada; from a single refill sherry butt at 55.5% and bottled after 22 years
Flavour profile: Deep, rich & dried fruits
Outturn: 236 bottles
Panel's tasting note: "The alluring nose presented apple sours and cherry pieces in dark chocolate, Brazil nuts and coconut macaroons; hints of Bovril, cinnamon, sandalwood and Manuka honey. At full strength, the palate was mouth-drawing and dry but full of flavour – Black Forest gateau, Kirsch, treacle toffee, blackcurrant jam, Campinos, fried sage leaves and brooding eastern spices. The reduced nose suggested smouldering aromatic woods, herbs and incense, with even more cherries, chocolate and nuts. The palate was a trance-inducing mix of teasing textures and delicious tastes of salted caramels, Moffat toffees and vanilla."
Drinking tip: "This will take you to another place - prepare for a journey of the senses"

INTENSELY TASTEY
An 11 year old Ileach from a Refill Sherry Butt at 66.7%.
Panel's Tasting Note: On the nose it reminds you of tobacco leaves and fish drying on wooden racks by the shore. Imagine Germolene antiseptic, First Aid boxes and soap in a coal scuttle. In a fisherman’s boot you find salt and smoke. If you’re hungry- seafood platters, dark honey, bacon and rye bread with caraway, sausage with fennel. To taste - sea shells on a salty jetty; treacle and spicy liquorice, Tabasco and Scotch Bonnet peppers; toasted caraway and sesame seeds drizzled with honey. Tantalising seafood cocktail and oily mackerel. Tempted by deep-fried Mars Bars? Cooked in the same oil as the fish? Imagine This! Initial distillation 2001.
Drinking Tip: Imagine This - under the stars with Jolly Jack Tars
