It’s no secret that our friends down at @BrewsmithBrewing are absolute wizards at producing low ABV, ultra sessionable, full-flavoured beers. We put our minds together and decided to brew something innovative yet classic. Light lager is where we landed because it is something, until now, we have yet to brew at Irrational. To put a fun twist on the beer we also wanted to try out a new-to-us hop product @YakimaChief Simcoe Noble. Analytically, Yakima Chief’s Noble Hops appear similar in character to traditional noble hops, including high aromatics and low alpha acids, while retaining Simcoe characteristics that make them unique. We went with 100% Alberta floor-malted Pilsner & Chit Malt from the barley-buffs over at @HogarthMalt and fermented low and slow with W-34/70. Expect an uber light, delicate, full-spectrum beer.

In 1968, Riccardo and Coralia Pignatelli della Leonessa purchased this ancient three hundred hectares estate. After a careful, conservative restoration, Castell’in Villa still maintains its medieval charm.
The Castell’in Villa Chianti Classico is composed of 100% Sangiovese grapes. It is a complex and serious blend of our different vineyards. The wine is aged in traditional Chianti Classico casks for about 12 months.
The Castell’in Villa Chianti Classico captures the fruit of the Sangiovese grapes and the earthy, spicy and slightly wild traces of the soil in a beautiful blend. It is an unusually concentrated Chianti Classico, that will invariably benefit from age. These wines are legendary for their ability to age, as is the case with the 1971 Riserva ($660, one left).
