"We took almost a decade to develop Clermont Steep, our first American Single Malt Whiskey. In a new-to-world, fast growing category, Freddie Noe started this experiment like he does with everything: right at home. Freddie reminisced about baking bread with his Granddaddy. There’s nostalgia in every sip of this category-defining liquid.

He started with a combination of Distiller’s barley and gold pilsner barley, and our trademark jug yeast to create the base of what would become our first ever American Single Malt whiskey. He then made an innovative, category-leading choice to age the barrels in a level 1 charred, new oak barrel to create a perfect environment to age our liquid. After 5 years, he had created a masterpiece that would make his grandaddy proud."

Handcrafted using carefully selected sherry butts from Glencadam Distillery’s dunnage warehouses and marrying together with bourbon casks, this fine single malt is then finished in Oloroso Sherry butts from Andalucía.

The result is a rich and sherry-forward expression, where the famous fruitiness of the Glencadam spirit is balanced with sultana and sweet-spice notes, that come from the Oloroso Sherry cask maturation."

Villa Franciacorta is located in the municipality of Monticelli Brusati, in the heart of Borgo Villa (in the province of Lombardy). Since 1978, the production of Franciacorta Millesimati wine made exclusively from estate-grown grapes has been the hallmark of the philosophy of the Bianchi family and the Villa Franciacorta estate. The Villa estate covers a total of 100 hectares, of which only 38 are planted with vines, 28 of which are in a single site around the village of the same name. In 1960, the Bianchi family began work on the restoration of the medieval hamlet, which over the last few decades has been returned to its former glory. Franciacorta is effectively Italy's answer to Champagne, and can often rival the wines of that storied region. Bright golden yellow with a subtle mousse. Peach, vanilla and a hint of honeydew melon on the nose. On the palate, it has an airy mousse and a rich fruity texture, subtly salty, with a toasted almond finish. It's a blend of 80% Chardonnay, 15% Pinot Noir, and 5% Pinot Blanc, a truly great bottle of sparkling wine.

Fueled by a deep passion for Bordeaux-style wine, our founder, Richter Bai, acquired both the renowned Becker Vineyard and Phantom Creek Vineyard, thus laying the cornerstone for the remarkable legacy of Phantom Creek Estates.He built a state-of-the-art spare no expense winery, complete with a heli- pad should you want to fuel the chopper and drop in. From a 11 year old parcel in East Kelowna, this dry Riesling was gradually fermented over six months by indigenous yeasts to bring additional richness and complexity. Their 2022 Riesling is fresh, crisp and floral. Delicate hints of honey and orange peel on the palate and a fine line of elegant acidity that pulls through to the finish.

Consulting white winemaker, Olivier Humbrecht Master of Wine and owner of Zind-Humbrech, oversees the white wine production at this estate.

Bindi Kostas Chardonnay

‘Bindi’, 50 kilometres northwest of Melbourne in the Macedon Ranges, is the family property of the Dhillon family. Originally purchased in the 1950s as part of the larger grazing farm ‘Bundaleer’, ‘Bindi’ is a 170-hectare farm of which 7 hectares are planted to Chardonnay and Pinot Noir. Fifteen hectares are dedicated to managed plantation eucalypts for high-grade furniture timber whilst the remainder of the land is maintained as remnant bushland and important indigenous grasslands.
 The Bindi vineyard is the fundamental focus of our endeavours. Their vineyard and winemaking philosophy is to seek balance and purity in the expression of our various individual vineyard sites and this philosophy is applied to farming and conservation at ‘Bindi’; the preservation of the natural harmony.
