The Burning Chair is a new KWM exclusive Bourbon from Savage and Cooke. This 4 year old Bourbon is Dave Phinney’s highly anticipated first release. It is intense and expressive. This Bourbon is blended from hand selected new charred American oak matured whiskies, finished in wine barrels from Dave’s Napa Valley Cabernet projects. Mash Bill: 75% Corn, 21% Rye, 4% Malted Barley

Andrew's Tasting Note

Nose: toasty with loads of caramel, orange, Demerara sugar and aromatic bitters; nutty, some almond tones and vanilla with some earthy leather, tannins and wine-y tones. 

Palate: rich, sweet and layered; the almond-nutty tones, honeyed oak and vanilla balance nicely with soft leather, dried dark fruits and Demerara; peppery spices and black licorice.

Finish: creamy, fruity and spicy; good length and weight.

Comment: this an elegant young Bourbon with a maturity well beyond its young age; a crossover whiskey, one that single malt drinkers will also enjoy!

 

Producer Tasting Note: "Aromatically intriguing with brown sugar, caramel, butterscotch and toasty oak. The palate is smooth and lush with loads of vanilla bean, baking spices, maple and baked apples. The finish is long and exciting, begging for another sip."

Production Details

Sourcing: Each barrel is hand-selected for it’s unique attributes by Dave. The youngest Bourbon in the blend is four years old. Tiny lots are procured from Kentucky, Indiana and Tennessee. Each barrel brings something special to the final blend.

Barrels: Aged for a minimum of four years in new charred American oak barrels and then uniquely finished in wine barrels from Dave’s Napa Valley Cabernet projects.

Water: The mature Bourbon is titrated to 88 proof with pure, pristine water from Dave’s high elevation property in Alexander Valley in Northern California.

Mash Bill: 75% Corn, 21% Rye, 4% Malted Barley

About Savage & Cooke

The Savage & Cooke distillery, owned by Napa Valley winemaker Dave Phinney, is located on historic Mare Island and is scheduled to open in early 2018. The decision to locate the distillery on Mare Island was due to its fascinating history as a naval shipyard, the plethora of space, stunning brownstone buildings and its proximity to both the Napa Valley and San Francisco. Savage & Cooke will distill, age and bottle a range of brown spirits including Bourbon, Whiskey and Rye.

Dave will craft offerings in the style that he appreciates most; complex flavors, concentration, balanced oak influence and lushness.

Small batch experimentation with additional spirits will take place on site and will be offered for tasting exclusively at the distillery. These offerings will change throughout the year. We look forward to welcoming you to our distillery.
