21 Year-old single cask Tobermory from a refill bourbon hogshead. 50.9% ABV

Evan's Tasting Note

Nose: Light smoke. Salt, black pepper, biscuity malt, olive oil, chicken broth packets/OXO, dried seaweed snacks, ripe green apple, macerated lemon, pears drizzled with honey, caramelised onions and garlic.

Palate: Creamy, salty and oily all at the same time. Seaweed then big black pepper that fades as the malt settles in. Triscuit crackers with smoked salmon and cream cheese. Soft wood spice. Caramelised and slightly burnt pie crust with the slight hint of lemon meringue that it once carried.

Finish: Decent length with a salty, peppery and buttery oak finish and hints of smoke.

Comments:  Quite the pick by the Toronto Whisky Society! Sad that there isn't much more of this coming.

Andrew's Tasting Note

Nose: massive honey (liquid and creamed), candied orange peel, decedent toasted oak, vanilla icing, Jelly Beans and over-cooked cherry pie; a faint hint of clean smoke, fresh oat cakes and waffle cookies with powered sugar.

Palate: creamy, honeyed and toasty with clean smoke; more waffle cookies sprinkled with powdered sugar and more over cooked cherry pie; juicy fruits in the form of Jelly Bellies, candied orange peel, fennel, clove and a touch of maple syrup.

Finish: silky, coating and toasty; juicy fruits, creamed honey and delicate salty smoke.

Comment: this is a lovely single cask, delicate and subtly smoked; lots of layers; and the label plays to stereotypical Canadiana!
