We love pushing the boundaries at Irrational. For the newest release in our Ethereal series, we wanted to try something new and exciting: very low and very slow fermentation. The fun comes on the process side, where we fermented this beer at an extremely low temperature well outside the normal specs of the yeast and lagered for an additional four weeks on top of our standard process. This one might be our cleanest, clearest, and crispest lager to date."

Speaking of magic, Em has taken a rabbit hiding that appeared on one of our later labels and given it pride of place on this 70cl version of the legendary distillery. More carrots please!"
