Most Bourbon is made up of three different grains: Corn, Rye, and Malted Barley. Some distilleries and companies will substitute Wheat for the Rye but you still typically end up with a whiskey built from a three-grain mash bill. The mash bill for this bourbon From Chuckanut Bay Distillery actually includes a less typical four grains: Corn, Wheat, Rye and Barley.
Coming to us from Bellingham, Washington – which happens to be the most northern city in the mainland United States outside of Alaska. Made using locally sourced grain and distilled in small batches in an also small 150 Gallon (565 Litres) Pot Still. Bottled at a respectable 48% ABV.

Rough Rider Straight Bourbon Whiskey was distilled in Indiana and bottled by Long Island Spirits of New York. After spending at least two years in American Oak casks it is finished in French Oak ex-Chardonnay wine casks that were rinsed/seasoned with high-proof brandy. Bottled at 45% ABV.

This Bourbon is a blend of 5,7 and 8 year old Bourbons from Kentucky and Tennessee. Produced from a mashbill of 70% corn and the balance a mix of rye and wheat. The Bourbon was finished in Napa Cabernet barrels before bottling at 42%. Only a little over 10,000 bottles were produced.
Evan's tasting note:
Nose: Vanilla and hibiscus, a combination of Juicy Fruit and Wrigley's Spearmint Gum. Also lime zest, cherries, cinnamon hearts, marmalade, toffee and candied bacon.
Palate: Lime Pith, marmalade again. Some acidity helps bring out light spice notes. Oranges and cloves, nutmeg and cinnamon, hints of balsamic vinegar without going too over the top.
Finish: Faint notes of dried fruits (apricots and dates) mingle with the wood spices nicely.
Comment: Fairly robust and complex for 42% ABV. Nice complexity. The wine cask finishing works well on this Bourbon.
Producer Tasting Note: "Aromatically intriguing with brown sugar, maple, caramelized oak, exotic spices, orange peel and campfire. The palate is velvety smooth, rich and packed with flavors of brown spice, honey and intense caramel. The complexity is apparent and the finish is persistent, long lasting and focused."
