This 100% Sauvignon Blanc hails from the northeast hillside of Collio, where white varietals thrive due to the mild, cool climate and marly clay and limestone-flecked soils. It was fermented in stainless steel to preserve freshness, with partial malolactic fermentation (20%) to soften acidity while adding texture, creaminess, and body. It is intensely aromatic, scented with notes of elderflower, pink grapefruit and mango. The palate refrefreshing and nicely balanced, exhibiting fine structure minerality on the finish.
