This small winery is led by a powerfully talented trio, including winemaker Walter Clappis, who has been making wine for more than 30 years and is considered to be one of Australia's top Winemakers. He's the only person to have one the prestigious Dan Murphy Trophy three times and during the 20 years he owned his previous winery, Ingoldby, he racked up 37 trophies and 124 gold medals. Now he's one of the faces behind The Hedonist, and here's what he and his team have to say about the 2015 vintage: "Colour: Dark cherry red with plum hue. Bouquet: Lifted chocolate and dark cherries, with a hint of spice. Palate: Dark cherries with licorice and chocolate, underlying earthy tones, held together with silky tannins." Sounds mighty delicious to us! (And it's organic, to boot.)

Their vineyards are situated in the sub-regions of Seppeltsfield, Marananga and Moppa located along the Barossa Valley’s western edge and are some of the oldest vines in the world. Thin, sandy loam topsoils lie sparsely scattered over ancient deposits of bluestone, marble stone, limestone, quartz and ironstone. Rainfall is limited, often to less than 400 millimetres a year falling through winter and early spring. Subsurface clay retains valuable moisture, sustaining the vines through the long, warm and dry summers and autumns. The perfect, low-disease-pressure conditions in which to grow small, healthy bunches of compact, flavour-packed berries.
The Seven Acre vineyard was originally planted in 1990. Each vintage typically undergoes 24-30 months of maturation in American oak with a small amount of further ageing in the bottle before release.
