The review: "The 2012 Pouilly-Fumé Aubaine with its lime greenish citrus color comes from a 0.3-hectare river bank parcel in Tracy where 45-year-old Sauvignon vines root in poor calcareous clay soils (“Marnes Portlandien” and “Oxfordien”) and produce a small yield. After pressing, this spontaneously fermented wine was kept on its lees in concrete tanks for more than 10 months at a constant low temperature. It reveals a lovely clear and dense bouquet with invitingly tropical fruit flavors. On the palate this is a full-bodied, fruit-intense, minerally structured and elegant Sauvignon with a lot of extract, a grippy finish and a remarkable powerful length. This excellent wine is already accessible, but will keep its top form for another three years."

Formerly known as Domaine Bernard Fouquet, until Bernard retired in 2021, handing the reins to Charles Lesaffre. Charles is the grandson of Gérald Bruley des Varannes, the man from whom Bernard's father André acquired his first vineyards, thereby bringing the story of the Domaine full circle. An avid practitioner of viticulture and oenology, Charles joined Bernard as an associate in 2019. Two years into his tenure, Charles has emphasized organic and biodynamic practices. Charles has continued, as Bernard before him, to capture the unique Vouvray mineral tones, along with the wonderfully balanced expression of fruit of the Chenin Blanc grape, in his wines.
The Cuvee de Silex from Domaines des Aubuisieres is made from fifty year--old Chenin Blanc vines in the Loire Valley. Soils for 'Cuvée Silex' are exclusively flint stone (silex in French means flint), imparting a smoky, mineral essence to the wine. Look for a bouquet of pear, green apple, quince, and melon that develops notes of mineral and honey. The wine is ever so slightly off-dry, which lends it a juicy freshness. Expressive and exceptionally well balanced on the palate with lots of lemon and a trace of anise. Great with turkey, spicy Asian dishes and salmon.
